How to Make Kimchi Recipe

How to Make Kimchi

01.13.10 by Jackie

Kimchi is a Korean pickled dish made of vegetables. It's absolutely delicious and goes with almost every meal. Aunt Elise, maman's sister visiting from Vietnam, taught me how to make a simple version of kimchi. It doesn't have the red color traditionally associated with kimchi, but there are actually several varieties, like this one, that have little or no red chili. What can I say, I'm kind of a wimp when it comes to spicy food.

We only used Napa cabbage, very simple seasoning and a good bit patience. It takes a few days for the cabbage to ferment, and then it's ready to enjoy.

You usually eat kimchi as a condiment with another dish, and my favorite "partner" is Cơm Gà Siu Siu. It's boiled chicken in a caramelized-onion broth. Serve the pieces of chicken with jasmine rice (cooked in the same chicken broth as well, I'll post the recipe soon), nước mắm (fish sauce in Vietnamese) and kimchi on the side. Lulu, on the other hand, just likes eating it by itself. However you decide to use it, homemade kimchi is definitely worth the effort.

Vietnamese Meatloaf (Mam Chung Thit) Recipe

Mắm chưng thịt is a staple of Vietnamese cuisine. It's a blend of pork or chicken, crab meat, salted fish fillet in brine, bean thread noodles, mushrooms and eggs.

For this recipe, I used a mix of chicken breast and thighs. The flavor is reminiscent of the filling of a meat egg roll combined with the strong flavor of salted fish fillet in nước mắm (brine). The most common fish used for making steam fish cakes is snakehead fish, though mackerel or catfish can be used as well.

Asian Style Warm Potato Salad Recipe

Asian Style Warm Potato Salad

12.29.09 by Jackie
This potato salad is made with a medley of Japanese white sweet potatoes, yams, Yukons and Peruvian purples. The different varieties provide a contrast of both flavor and color. To give the salad an Asian flair, I also added bok choy and several types of mushrooms. The dressing, made of honey, rice vinegar, soy sauce and ginger paste, helps tie the flavors of the vegetables together.

Matcha Green Tea Latte Recipe

Matcha Green Tea Latte

12.26.09 by Jackie

I prepared my matcha green tea latte with the same procedure one would use for making white hot chocolate. The drink is made with a blend of lightly sweetened matcha green tea, white chocolate, steamed milk and heavy cream. You wouldn't want to drink this every day, but that's what holiday treats are all about!

This recipe can be modified to feature many different seasonal flavors. Peppermint, cinnamon and other spices come to mind. You don't have to go to the local coffee shop to enjoy holiday specials anymore; be your own barista and save the change for stocking stuffers.

Mango Lassi (Indian Yogurt Drink) Recipe

Every mango lassi recipe you'll find always has the same list of ingredients. Milk, yogurt, mango (fresh or canned), sugar and some crushed ice are always present, though the proportions may differ. To these, I added cardamom extract, saffron (for color) and a pinch of salt to enhance the flavor of the mango.

There's something magical about mango lassi (Indian-style smoothie). It has the richness of a milkshake without the calories. On top of that, it's ultra easy to make at home. You don't have to wait for your next trip to the local Indian restaurant to enjoy a tall glass of mango-ey goodness.
