Paneer butter masala probably isn't the healthiest vegetarian dish out there, but it is surely delicious. Pretty much anything with butter in the title is a recipe for success. I remember a restaurant reviewer once saying that given enough butter and cream, sand can taste great. That may be a bit of a stretch, but when you layer this sauce over gently fried Indian cheese, it’s impossible to resist.

The sauce consists of a blend of butter, heavy cream, tomato sauce, lime juice, almond flour and a few other Indian spices. To that, fried cubes of paneer (Indian cheese) are added and simmered. You could always substitute fried tofu for the paneer, but I think it's better to go all out in the calorie department if you’re going to make this dish!

Indian Style Black Eyed Pea Rice (Pulao Recipe) Recipe

Feeding a vegetarian crowd isn't as difficult as it may seem. I usually pair a legume with rice, which is the perfect balance for a vegetarian diet. I've been getting fresh black-eyed peas (also known as "cow peas") at the local stand, and instead of serving them as a boring bean salad, I incorporated them in a rice dish, flavored with Indian spices. I've made this dish in the past; it's called "pulao". Our family loves the burnt rice at the bottom of the pot, called "kurchan".

First, I sautéed black-eyed peas in onions, garlic, cider vinegar and red chili powder. They're very firm, so they take slightly longer to cook then the parboiled dried variety. I let them simmer until tender, then finished cooking them with steamed basmati rice and baby spinach.

Vegetarian Nihari (Spicy Tofu Recipe) Recipe

One of my most favorite Indian dishes is nihari. It's a goat (or any other meat) stew dish. It's spicy, flavorful and the meat is extremely tender. I love dipping naans (flat Indian bread) in the sauce. But I always end up feeling so bad when I see my husband Lulu, who is a vegetarian, staring at me. So this time, I also made a tofu version using the same gravy sauce.

I chose medium-firm tofu and Japanese eggplants and deep-fried them. The texture is perfect once they are soaked in the spicy sauce. I also added broccoli for a balanced meal. The advantage of the veggie version is it's just as tasty, much healthier (I omitted the bhaghar, a typical final layer of red oil in a lot of Indian dishes) and it cooks a lot faster than the meat version.

Mango Lemonade Recipe

I love Kesar mangoes. The fruit is so soft and juicy that we usually just cut them in halves and scoop the flesh out. Unfortunately, I think my eyes were bigger than my stomach at the Asian market this week, when I bought two cases of mangoes. To put a dent in my stockpile, I made mango purée, cooked it in sugar to enhance the flavor, then mixed it with regular lemonade.

I added cardamom to give a more exotic twist to this already tropical drink. If you're looking for something special to serve for your Memorial Day weekend barbeque, mango lemonade could be it. And to satisfy the adult palate, you could always spike it with rum!

Here's a new take on the American burger classic! Spice up your traditional barbecue menu by adding flavors from India.

Masala burgers would make a perfect addition to your spread this Memorial Day weekend. They're a welcome change from regular beef burgers. I've made fusion burgers in the past, including keema burgers made with Indian-style ground beef. This time, I flavored hamburger patties with garam masala, ginger garlic paste, turmeric and red chili powder. I also changed the condiments; I substituted kachumbar (Indian salsa), my own concoction of raita (Indian yogurt sauce) and tamarind sauce for the ordinary ketchup, mayo, mustard and pickle relish.
