Mango Lassi (Indian Yogurt Drink) Recipe

Every mango lassi recipe you'll find always has the same list of ingredients. Milk, yogurt, mango (fresh or canned), sugar and some crushed ice are always present, though the proportions may differ. To these, I added cardamom extract, saffron (for color) and a pinch of salt to enhance the flavor of the mango.

There's something magical about mango lassi (Indian-style smoothie). It has the richness of a milkshake without the calories. On top of that, it's ultra easy to make at home. You don't have to wait for your next trip to the local Indian restaurant to enjoy a tall glass of mango-ey goodness.

Sabudana Khichdi (Indian Sago and Potato Snack) Recipe

Sabudana khichdi is a dish that is popular in the state of Maharashtra in India. Sabudana refers to the sago (tapioca) pearls that are used in this dish, and khichdi roughly translates to "hodgepodge".  Every region in India has their own version of khichdi, usually made with rice and lentils.

This particular version is often eaten after fasts. It's also a very popular breakfast dish. I like this dish because sago is a fairly exotic ingredient, and I don't get to cook with it very often. 

The challenge is in preparing the sago properly. Make sure to buy your sago from an Indian store; I've tried to make it with sago from the Asian market and it didn't turn out properly. When it turns out right, the cooked sago melts in your mouth, and the spices and curry leaves that the potatoes cook in is beyond heavenly.

Rooh Afza, Summer Drink of The East Recipe

I've featured sharbat (the South Asian equivalent of the Western chocolate milk for kids) in the past. The key ingredient in sharbat is a product called Rooh Afza, which is a syrup made of flower petals such as Gulab (Rose), coriander seeds, kewra and watermelon extract.  It literally translates to "that which tempts your soul".

Rooh Afza is fairly versatile and is used in many other drinks and desserts. One such recipe is similar to sharbat, but without the milk and nuts. I often make this drink when I need to cool off a bit. It's very refreshing and light.

Mattar Paneer (Peas and Fried Indian Cheese Curry) Recipe

Mattar Paneer is a dish made with peas and Indian cheese.  It isn't as quite popular as palak paneer, a similar recipe made with spinach instead of peas.

In our home, mattar paneer is made fairly often because it's the girls' favorite Indian dish.  If you have kids and can't get them to eat their peas, this recipe may do the trick. The key is to make a creamy masala sauce. To make the dish even healthier, I add diced, steamed potatoes that are approximately the same shape as the paneer.

Goat Korma (Spicy Curried Braised Goat Meat) Recipe

Korma is a spicy curried dish of braised meat, made with fried onion paste. My favorite meat for korma is goat. Goat meat is not very popular in Western cuisine but it's quite common in South Asian dishes. It has a very similar taste to lamb but is much more tender. This is one of Lulu's grandma's recipes. She taught it to my mother-in-law, who passed the recipe on to me.

Contrary to murgh makhani curry (butter chicken), the meat doesn't require marinating time but tastes best when prepared the day before. Korma is also a lighter version of butter chicken since it contains no cream.

Korma is usually served with naan (Indian round fluffy bread made of white flour), basmati rice or some roti (flat Indian wheat bread).
