Pinapple Coconut Muffin Recipe

The main reason I baked these muffins is that I had leftover crushed pineapple from our recent Vietnamese beef fondue party. The more romantic reason I tell my husband Lulu is that I'm always thinking about him and I want to please him all the time. Given his sweet tooth, Lulu always enjoys a hot cup of fruity white tea and a few sweet treats, so I think he'll fall for it

The muffins are flavored with pineapple, coconut and lemon chocolate chips.

Haute Potato Cookbook Review

I wanted to share with you a review of my first cookbook Haute Potato from food blogger Sally over at BewitchingKitchen.com. I first got in contact with Sally way back at the end of 2009 (how time flies!) and ever since we've been reading each other's recipes. It’s too late to order the book in time for Christmas, but there are potato dishes in the book for any time of the year, so I hope you give it a try! Trader Joe's Gingerbread House Review

I love the weekend preceding Christmas. Everyone's home and we have time to finally relax by the fire. Shayla, my husband's youngest sister, and I spent the afternoon assembling our gingerbread house. I purchased it at Trader Joe's. For about $7, it's definitely worth the money, and I think Shayla enjoyed piping and adding her own candies to decorate the house. However, as pretty as it is, it tasted terrible. Maybe they have to be used right away (I bought the house a week ago), or more likely, they are not intended to be eaten.
