Cold Pasta Salad Recipe

Cold pasta salad is usually made with mayonnaise dressing. One member of my family is allergic to eggs, so this recipe suits her perfectly; as no eggs are used. Even though there are no eggs, I wanted the dressing to be creamy and flavorful, so I mixed in goat cheese with the usual vinaigrette ingredients. For a little extra kick, I added onions cooked down in white balsamic vinegar.

I used cork-screw-shaped pasta, but any other shape such as bowties, shells or penne would work as well. In addition to the diced tomatoes and steamed zucchini, I added black lentils and pan-seared tofu to give this vegetarian pasta dish some protein. Cooking does not always have to be complicated. If you have fresh ingredients and a lot of love, you’ll have a wonderful meal. Bon appétit!

Israeli Couscous Risotto with Roasted Bell Peppers  Recipe

Risotto is a traditional dish made with rice cooked in broth to a creamy consistency. Usually, I add rice-shaped pasta (such as orzo or melon-seed pasta) which add more creaminess to the risotto. The problem was that today I unfortunately had no Arborio or Carnaroli rice in my pantry. I experimented with the only starchy ingredient I found in the kitchen; Israeli couscous. Israeli couscous is a small-grained toasted pasta.

I flavored it with roasted bell peppers. It's not very traditional but I found the starchiness of the couscous worked well. Surprisingly, the new version of risotto was very popular among the children in my house. I'm definitely going to make this dish again, maybe with other flavorings.

Making delicious pasta is fairly easy; however it requires a few little tricks to ensure that the dish always turns beautifully. The pasta sauce is one of the key components. Today, I used ground beef, fresh ripe tomatoes, grilled zucchini, eggplant, Portobello mushrooms, a sprinkle of Parmesan cheese and fresh oregano. I bound all the ingredients together using pasta water.

This pasta dish is unpretentious, tasty and oh so simple.

Blue Cheese Pasta Sauce Recipe

Blue cheese sauce isn't what you would call low-calorie, but it's certainly very tasty. Instead of the usual Gruyère cheese, I used roquefort cheese in a Mornay sauce, which is basically a béchamel (creamy sauce made of flour, butter and milk) with cheese. It's not the authentic French sauce but my husband Lulu and his little sister Sunny loved the strong flavor of blue cheese.

I poured the blue cheese sauce over riccioli pasta and topped with a brunoise, which is a blend of similarly-sized and shaped diced vegetables (I used orange bell peppers, crimini mushrooms, zucchini, jiacama and carrots). The addition of the jicama adds body and crunch to the vegetarian pasta meal. I also finished the dish with crumbled blue cheese as a reminder of the flavor from the creamy pasta sauce.

Spaghetti and Meatballs Recipe

If you're looking for a delicious meat ball recipe, look no further. I grind both beef chunks and veal for added flavor, but the real secret is that I added bread that I soaked in milk. I learned that trick from a chef in Florence, Italy when I was a teenager. The mixture is flavored with various herbs, Parmesan cheese and binded with a few eggs. All that is left is to make your own tomato sauce. I browned each meatball in a non-stick pan, then let the meatballs braise in the homemade tomato sauce.
