Spinach Noodle Salad Recipe

The girls and I played with our pasta maker today and made spinach noodles. Making homemade noodles was so much fun and wasn't that complicated. We sautéed them in a bit of garlic butter for lunch and used the leftovers for a dinner noodle salad. I loaded it with tofu, leftover roasted chicken pieces (for the non-vegetarians), sugar snap peas, shiitake mushrooms and dried cherries for a little tart flavor. I dressed the noodle salad with miso and tahini vinaigrette. You could add tomatoes or red bell peppers for a pop of color but I thought the cherries were sufficient. 

This cold Asian-style noodle salad can be prepared hours in advance if the miso vinaigrette is kept on the side and mixed right before serving.

Rigatoni Pasta with Eggplant and Green Peas Recipe

The weekend was so nice; we spent the days lounging in our backyard. I prepared effortless meals to maximize my time outside with the family, but as always, made sure not to skimp on the flavor.

Here's the pasta dish I made yesterday evening. I cooked rigatoni pasta and flavored it with an earthy and chunky eggplant sauce. As a last touch, I added frozen green peas. You could add other vegetables such as chickpeas or edamame beans if you prefer, especially if you want to add a little protein to the dish.

Morel Mushroom Tomato Pasta Sauce Recipe Recipe

Making pasta sauce doesn't have to take hours or be difficult. I prepared a flavorful, gourmet tomato sauce combining freshly picked San Marzano tomatoes, leeks, fresh morel mushrooms and a red Thai chile with very little effort. I used it with store-bought mushroom ricotta ravioli pasta.

The temperature in the San Francisco Bay Area reached over 100 degrees this weekend and it seems the heat wave is going to continue this coming week. My husband Lulu is ecstatic because the San Marzano tomatoes he planted months ago are finally growing and ripening on the vine. San Marzano tomatoes are a variety of plum tomatoes and they're the best paste tomatoes for making sauces.

Zucchini Lasagna Recipe

My husband Lulu has become such a garden expert over the years. This morning he harvested over 2 pounds of zebra striped zucchini in our garden, which left me almost speechless. I wasn’t expecting to make a zucchini dish today, but that’s half the fun of having your own vegetable garden!

I decided to prepare a vegetarian zucchini lasagna. The dish consists of three elements: a creamy béchamel sauce, an enormous amount of pan-fried zucchini and my special lasagna sheets from my Haute Potato cookbook. Instead of using regular lasagna pasta sheets, I used homemade gnocchi dough flattened into long thin sheets. When writing Haute Potato, I really tried to think outside the box and came up with a few potato recipes that I believe haven't been created before. If you don't have time, you can always substitute with the store-bought regular lasagna sheets. But if you have time to cook during this long Memorial Day weekend, give my Haute Potato recipe a try; rest assured your efforts will be rewarded.

Mac and Cheese Shepherd's Pie Recipe Recipe

We've been experiencing rainy days in the Bay Area and I thought a little comfort food would warm us up. I couldn't decide between a shepherd's pie or mac and cheese, so I went for a combination of the two.

To keep the dish vegetarian, I prepared the bottom layer with a mixture of vegetarian protein crumble, tomatoes and onions; you could opt for regular ground beef if you prefer. Instead of topping the dish with mashed potatoes as you would in a standard shepherd's pie recipe, I added creamy mac and cheese. Needless to say, the richness of the dish was a huge hit even baby Aria asked for more!
