My take on the breakfast quesadilla is part omelet, part cheese quesadilla. Don't let the name fool you though; the combination makes for an easy and tasty school lunch. I serve them at room temperature, along with salsa so the children can dip them. It's playful and no utensils are required. The recipe can be adapted with additional ingredients that you have on hand.

Using the kimchi from yesterday's post, I made a dish today for true vegetarians and vegans like my Aunt Elise. She is a monk from Vietnam who's currently visiting us, and one of her favorite meals is mock scrambled eggs with kimchi.  The mock scrambled eggs are actually scrambled boiled tofu. Today, I made mine with turmeric and green onions.

The fluffiness of the tofu complements the salty flavor of the kimchi well. Lulu's New Year's resolution has been to exercise and live a healthier life. He's enrolled at the gym and has been going regularly. My way of supporting his effort is by making quick, healthy meals and snacks that are tasty and good for him.

Homemade Biscuits with Sour Cream, Chives and Parmesan Recipe

Sunny and I woke up very early this morning to prepare a festive brunch for the whole family. We made some fresh juices, smoothies, crêpes, hashbrowns and sour cream biscuits. Making biscuits is a little messy but so worth it. Our family is very fond of buttermilk biscuits, but sour cream biscuits are even more decadent and delicious. The sour cream imparts a tangy flavor and richness that is hard to beat. We flavored the biscuits with parmesan cheese and garlic chives from the garden.

I don't know if I've mentioned it, but my Aunt Elise is visiting us from Vietnam. She's never had biscuits before, and so she looked at the little rounds of bread with curiosity. After she took her first bite, she was absolutely hooked. Biscuits truly are universal in their appeal.

Scrambled Tofu (An Amazing Egg Substitute) Recipe

Today, Lulu worked from home. I wanted us to have a light lunch together but I felt too lazy to make a fancy meal. I was craving scrambled eggs with salsa and some home-made chorizo on a bagel but of course, once more, I had to create a vegetarian alternative for Lulu.

Since we got married, I've tested lots of varieties of tofu. One type is perfect for simulating scrambled eggs. I add turmeric powder to give the product a yellow hue. It's really hard to tell the difference between it and real scrambled eggs.  Best of all, it tastes great and takes almost no time to make.

Tips for Perfect Pancakes

Pancakes have an almost magical ability to turn anyone into a child again. There's something irresistible about waking up on a Saturday morning, stumbling into the kitchen and being greeted by the smell of batter and a mountain of fluffy pancakes just begging to be smothered in maple syrup and whipped butter.

Perhaps part of the beauty of pancakes is that they're so simple to make. My teenage sisters-in-law often make them on their own for the family. As with many simple dishes though, attention to detail is the difference between drab and delicious. Read on to learn my tips on making excellent pancakes every time.
