This mango dessert is my way of raging against the dying of the (sun)light. Fall is here, but at least it can be summer on our dessert plates!

While I was in Paris, I had quite a few delicious clafoutis. This dessert is inspired by those treats. I caramelized a ripe mango, diced it and covered it with a clafoutis-like batter. A short time in the oven, et voilà! The spongy, sweet dessert was a fabulous feast. It's best eaten warm with a hot cup of tea. It’s also a great alternative to French toast for a lovely Sunday brunch.

Fig Noor Bread Cake Recipe

This fruity bread dessert is so delicious you won't believe it only requires 5 ingredients. No egg, no baking time and no more than 30 minutes prep time.

I cut black sesame and caraway Noor bread into small pieces and soaked them in hot fig preserves. Once the preserves were chilled, the cake jelled into one entity. I served the fig Noor bread cake with tangy crème fraîche for richness and pineapple and raspberries for a touch of acidity to balance the sweetness of the preserves. 

Last weekend, my good friend Laura, who's a jam expert, came over and picked 15 pounds of Black Mission figs in our garden. Aria and I helped gather as much fruit as possible so she could prepare her yummy fruit preserves. While selecting the ripe fruits, we chatted and Laura told me she would try a new technique.

The idea was to find a method that doesn't require pectin. To make the preserves, Laura started by combining water and lemon juice. After bringing the liquid to a boil, she stirred in sugar and brought the temperature to 250°F. Finally, she added the figs and vanilla beans and cooked the mixture at 220 degrees until jelled.

Basil and Pineapple Cookie Cake Recipe Recipe

This cookie cake recipe closes our week featuring Boyajian exquisite oils and vinegars. I was inspired to make this recipe by Martha Stewart's giant chocolate chip cookie cake. I used the basil oil both in the cookie dough, which by the way contains no butter, and the mascarpone cheese filling.

To repeat and reinforce the flavors in the filling, I deep-fried basil leaves, coated them in raw sugar, crumbled them and mixed them into the mascarpone filling. I also included freshly chopped ripe pineapple to add some sweetness to this gourmet dessert.

Chilled Peach Soup Recipe

Baby Aria and I spent the day in our garden. She helped me trim the basil plants and gather ripe peaches in large baskets. Since the skin of this specific variety of peach is very fuzzy, they couldn't be eaten as is because it could have irritated her throat. So I blanched the fruit and peeled the skin. The skin unveiled a beautiful yellow flesh and the stone was easy to remove because the fruit was so ripe. They were very flavorful and sweet. 

I made syrup flavored with kaffir lime and ginger and poached the halved peaches for a few minutes. You could garnish the chilled peach soup with other small-sized fruits such as berries. I wanted to impart an Asian flair to the light snack, so I paired it with purple mangosteens. The result was spectacular.

Chocolate Cherry Muffin Recipe

Whenever I go a little overboard buying bananas at the market, once the bananas are totally over-ripe, I end up mashing to them for baking. Muffins are a great way to make use of them, and today I made chocolate sour cherry muffins. I used frozen Montmorency cherries, dried cherries and milk chocolate chips. The tartness from the fruit provided a great balance of flavors with the richness from the chocolate.

Lya's best friend is having a sleepover tonight, so I prepared these for them. Their plan is to dance othe  the XBOX 360 Dance Central game, then watch loads of movies. The bffs will definitely get munchies during their fun night, and these cherry muffins are the perfect late night snack!
