Paneer, Brussel Sprout and Butternut Squash Quinoa Recipe Recipe

I purposely roasted a large quantity of butternut squash yesterday so I could use the leftovers for this quinoa dish. What I find very attractive about this gluten-free dish is the abundance of colors, thanks to the warm butternut squash and the bright Brussels sprouts. For a touch of richness in this otherwise healthy dish, I added fried cubes of paneer cheese.

You could enjoy this quinoa dish on its own if you're a vegetarian, or you could serve it, like I did, as a side dish with a poulet rôti (my favorite roasted chicken).

Roasted Butternut Squash Galette Recipe Recipe

When you feel like improvising, consider making a galette. It doesn't have to look perfect, and it's basically a combination of dough and filling. It's easy to modify, easy to adapt.

I prepared a flaky, buttery dough and roasted a butternut squash. Then I created a large disk, placed the flavorful butternut squash filling in the center and made the free-form tart.

Cooking doesn't have to look perfect. The more rustic this savory tart appears, the better; starting everything from scratch only adds to the charm of the homemade meal. Plus, it's not very labor-intensive and I find rolling the dough very de-stressing. So if you want to free your mind in the evening, just do as I do and mix up some dough!

Roasted Lamb Banh Mi Recipe Recipe

Roasted Lamb Banh Mi Recipe

01.30.14 by Jackie

We recently had roasted lamb flavored with pomegranate. As usual, I used the leftover meat the following day and prepared my favorite sandwich, a bánh mì  of course! You can find the recipe for the baguette, lime mayonnaise and Vietnamese pickles in my second cookbook, aptly entitled Banh Mi.

I have to admit a lamb bánh mì  is not “authentic”. Having said that, bánh mì is an adaptation of the French baguette sandwich. When the French left Vietnam, some of the ingredients such as the cornichons (French small gherkins) became so costly, they were substituted with local food items (pickled carrots and daikon with cilantro and sliced green chiles). The fillings can be tailored to suit your favorite flavorings. Adaptation and experimentation are why we have the foods we have today, so get in the kitchen and have some fun!

Kale Salad with Pomegranate Dressing Recipe

Here’s another Meatless Monday recipe for the beginning of the week. I wanted to feature a flavorful yet healthy one, so I prepared a baby kale salad with pomegranate dressing. I also added shredded carrots and spiced pecans for extra crunch and nutrition. And to reinforce the tart and sour taste of this salad, I also added dried cranberries.

I think you've probably noticed my recent love for all things pomegranate. I prepared the dressing with freshly squeezed pomegranate juice, a little mustard, agave nectar and flax seed oil to complete the delicious vinaigrette. Et voilà!

Shrimp in Pomegranate Sauce Recipe

Shrimp in Pomegranate Sauce

01.23.14 by Jackie

I've become addicted to pomegranate lately and I figured if it was good in a spread, it would go just as wonderfully with seafood because of its sour, tart and slightly sweet flavors.

First, I sautéed the shrimp in garlic until fully cooked, then covered them in a thick pomegranate sauce, which consisted of fresh pomegranate seeds, of course, and caramelized onion puree. The onions helped balance the sweetness of the sauce while also giving it a thicker texture.
