Lemon Mini Cupcake Recipe Recipe

Lemon Mini Cupcake Recipe

03.28.14 by Jackie

We're hosting a casual gathering with family friends today. I think cupcakes are the best ending to such an evening. I prepared butter-y mini-cupcakes made with a very light lemon-flavored genoise cake batter. To reinforce the flavor, I topped the cupcakes with lemon cream cheese frosting.

I love serving and eating cupcakes. You can make them for any occasion and they're an informal way to end a meal or to enjoy just as a snack.

Tomato Chutney Appetizers with Blue Cheese Recipe

Living in a multicutural household, I love melding flavors on our plates. This evening, I had leftover tomato chutney and created mini blue cheese appetizers. How cute did they turn out?

The spiciness from the chutney against the richness from the cheese is always a hit. And if you prepare the chutney in advance (you could also use any store-bought chutneys mixed with a bit of tomato sauce), you can bake these adorable appetizers in no time.

Aria, at only 28-months-old, is already the best sous-chef a mom could ever hope for. She helped me play and create disks of puff pastry. Aria's always eager to learn new things. Cooking with your toddler is a great method to practice and learn new shapes.

Red Wine Onion Beef Broth Recipe

Red Wine Onion Beef Broth

03.25.14 by Jackie

My husband Lulu is traveling all week, but right before taking him to the airport, his allergies were bothering him. I gave him antihistamine and prepared a French onion soup-inspired broth to ease his congestion. The broth was made of a combination of red wine, beef bones and loads of onions. I thickened it with a simple roux (flour and butter mixture) and upped the flavored with fresh thyme.

I served the broth with cheesy cornucopia (horn-shaped) puff pastry  appetizers. They provided the perfect contrast of texture with the flavorful broth.

Chocolate Chip Cookie Pie Recipe Recipe

Baking can never go wrong as long as you follow a few simple rules: use the best quality ingredients, carefully measure accurate quantities and bake at the correct temperature and cooking time. Sunny, my 18-year-old sister-in-law, has made her signature cookie pie so many times, I bet she could prepare this with her eyes closed. She keeps everything very simple using quality butter, organic brown eggs, unbleached flour, pure vanilla extract, Ghirardelli semi-sweet chocolate and unsulfured, blackstrap molasses (the dark, viscous kind has the highest possible extraction of sugar from raw sugar cane).

Speaking completely objectively on the subject , this is the best cookie pie ever made. We were lucky Sunny prepared 4 batches for our family brunch this weekend. The freshly baked goods were so scrumptious: sinfully rich and soft with gooey pockets of melt-y chocolate. True perfection!

Chocolate Macarons Recipe

Chocolate Macarons

03.21.14 by Jackie

In my opinion, macarons are the epitome of a classic, elegant French dessert. If you've been following my culinary adventures, you've probably noticed how very keen I am on serving individual, miniature portions and that's exactly what I adore about macarons. They're made of a sweet meringue (egg whites, sugar and almond flour) sandwiched around a flavored filling of some sort. For this version, I used chocolate ganache (heated heavy cream poured over finely chopped exquisite, high-quality chocolate).

Cooking (and by extension baking) is an expression of love. I think the person who receives your baked goods will appreciate your effort and feel special. And that's my favorite part; I take pleasure in seeing the ones I love happy.
