Lavender Grilled Chicken Recipe Recipe

Lavender Grilled Chicken Recipe

06.03.14 by Jackie

We recently threw a barbecue dinner, and as I mentioned in last week's video, we grow all sorts of lavender. I made a marinade for chicken legs with lavender honey, lemon juice, herbes de Provence, dry sherry, garlic and soy sauce and used half of it for the glaze.

The glaze was thickened with tapioca starch; I used it as soon as the grill marks were visible on the chicken. I reinforced the lavender flavor with soaked sprigs of lavender. If you don't have fresh lavender, fresh rosemary would work fine too.

S'more-Inspired Dessert Recipe Recipe

S'more-Inspired Dessert Recipe

05.30.14 by Jackie

I'm not sure  who  invented the s'more dessert or when. What I do know is it's an abbreviation for "some more".

It's our family's tradition to light a camp fire right after using our barbecue. Since my childhood friend Alexia and her family are visiting from Paris, I wanted to give them the very American experience of molten marshmallows tucked with a piece of chocolate in between graham crackers.

We had leftover marshmallows, so I made a variation, an "indoor" s'more, combining a vanilla cake, marshmallow, peanut butter, raspberry liqueur, chocolate and a few dried fruits. My guests did, indeed, ask for some more!

Oxtail Stew Recipe Recipe

Oxtail Stew Recipe

05.27.14 by Jackie

My childhood friend Alexia is visiting from Paris. She and her husband Olivier are here in the Bay Area on their honeymoon. They're spending the day in San Francisco and I offered to keep an eye on their daughter Alice. Baby Aria and Alice are the same age and they get along as well as their mothers do. I wanted to make sure they both have a rich, nutritious meal that is at easy for them to chew and enjoy at the same time. An oxtail stew seemed to fit the bill.

First, I braised the oxtails in good quality drinking wine (the alcohol will cook off), cooked them with lima beans and thickened the gravy with whole wheat flour. I didn't serve the oxtails with the bone-in to be safe. The meat can easily be removed from the bones. And I paired them with green peas and purple pomme puree (mashed potatoes).

Taking care of 2 toddlers is a lot easier than I anticipated. Both are foodies and enjoyed finishing their meal with airy chocolate mousse. Alice and Aria were satisfied and full. I'm very happy and am hoping Alexia and Olivier are having a blast in the city!

Deconstructed Cherry Pistachio Trifle Recipe Recipe

This is my artsy interpretation of a deconstructed trifle. We had lovely guests flying in from Atlanta and I wanted to finish our meal with a wow factor. I displayed a wide array of colors using pistachios and cherries (the first ones harvested from our garden).

The cake portion of the dessert is an almond croquant. The thick custard was made with vanilla beans, sherry, mascarpone cheese and whipped cream. I also wanted to contrast the warmth from the croquant with Indian pistachio ice cream. The dessert was the perfect balance of flavor, texture and heat.

Vegetarian Wild Mushroom Pate Recipe Recipe

Living with so many vegetarians in my home, I always challenge myself to develop new meals that fit our family's diet. Daddy, my father-in-law (he's allergic to mushrooms), is out of town this week, so this wild mushroom pâté worked fine for last night's dinner. If, like me, you're not a vegetarian, this vegetarian dish is proof that vegetables such as mushrooms can be as satisfying as meat.

I used a combination of fresh thyme, morels, chanterelles, shiitake and Portobello mushrooms. They're rich in umami, which is the savory flavor quality that sorts of mimics what we get from meat.
