10 Healthy Vegetarian Snack Recipes Recipe

To fit my Meatless Monday tradition, here's a list of healthy snacks I've been cooking lately. My moto to get back into shape is to cook with fresh ingredients, legumes and grains and create toothsome, tasty  bites packed in protein.

Mushrooms are perfect for a "meaty" texture and nuts and legumes will help fill you up (and keep you satisfied that way throughout the day). Enjoy!

New York Steak with Maple and Riesling Wine Recipe

When you have a cut of meat that has character such a New York Strip steaks, the preparation is kept to a minimum. Last night, I seasoned the steaks with salt and pepper and seared them to have crisp, crunchy edges. I then transferred them to the oven to bring them to perfect, medium-rare, beautifully juicy meat. Once out of the oven, I improvised a sauce.

The idea behind the sauce was to balance out the saltiness of the dish with sweet notes. To do so, I used Vermont maple syrup Sunny's college roommate gave us (she's from the East Coast) and paired it with sweet Riesling.

I just bought a head of Chinese cabbage and a red one and I'm ready to get fit and pretty for our next summer vacation. I have 12 weeks until our family getaway to Cancun, Mexico (we spent our 5th wedding anniversary there). Controlling your diet can be fun too; it doesn't have to mean food should taste bland or be without great texture. Now I'm excited to create more nutritious dishes with the humble cabbage!

With a home full of vegetarians, I always challenge myself to develop new meals that fit our family's diet. Mushrooms are a great flavor and texture substitute for meat. If, like me and little Aria, you're not a vegetarian, cooking with mushrooms will help you creaete new vegetarian dishes that are as satisfying as meat.  

Morels, chanterelles (girolles in French), beech, maitake, Hegehogs, porcini, wood ear (also known as black fungus mushrooms or nấm mèo in Vietnamese), brown crimini , shiitake and Portobello mushrooms are all varieties  I've used often in the kitchen. They're rich in umami, which is the savory flavor quality that sort of mimics what we get from meat. Happy cooking!

Mushroom Stuffed Eggplant Gratin Recipe Recipe

Is there anything that screams  comfort food more than a dish of gratin? I prepared a morel mushroom stuffed eggplant gratin. Every so often, our family craves a rich, decadent, gooey and cheesy meal.

First I sliced the eggplant, then pan-fried the slices. The mixture was flavored with earthy mushrooms that pair wonderfully with the meaty texture of the eggplant and luscious, creamy ricotta cheese. To save time, you can prepare the elements of the dish in advance and assemble 00000at the last minute; I promise your hard work will definitely be rewarded!
