Smoked Salmon on Wonton Puff with Dill Cream Cheese Recipe

Smoked salmon is a very elegant ingredient to serve. It's slightly pricey but you don't need a whole lot to prepare a nice first entree.

I paired the salmon with a dill flavored cream cheese brightened with Meyer lemon juice and a fried wonton skin to add a little Asian flair and some crunch to the dish. Persian cucumbers are another nice contrast to the velvety texture of the smoked salmon.

Mocha Milk Chocolate Pot de Creme Recipe

A pot de crème is an egg custard that is very often flavored with chocolate. It's sort of a French version of chocolate pudding.

Preparing it is very easy. You basically follow the recipe for crème brûlée, but you bake the custard a little longer to get a thicker result.

Fresh Garden Salad served with Sesame Persian Cheese and Candied Walnuts Recipe

I received a request for this salad recipe that I served with a tatin de petits oignons perlés à l'Indienne a few days ago.

Although my husband is vegetarian, he is not a big fan of simple green lettuce. So I tried to dress it up with little helpers like a citrus relish, cheese and some nuts. The nuts are a great addition of protein for vegetarians.

Of course, the key to a good salad is the vinaigrette. I always try to make my own because the store-bought ones contain preservatives and gum to make the texture more dense, instead of using mustard.

Indian-Style Pearl Onion Confit Upside-Down Tart (Tarte Tatin de Petits Oignons Perles a l'Indienne) Recipe

The tarte tatin (upside-down tart) was originally made with caramelized apples. It was created by the Tatin sisters at the beginning of the century. The two demoiselles Tatin, Fanny and Caroline, ran a little eatary in a hotel in Sologne, in the countryside of France near Orleans. They were famous for their apple tarts. One day, one of the sisters clumsily forgot to place the puff pastry dough and put the caramelized apple layer first and that's how a fortunate mistake created the trendy dish.

A French way to make an onion confit would be with caramelized onions that were previously boiled in milk but I had some leftover curried pearl onions called do-pyaaza. It's cooked in a generous amount of ghee, yogurt and flavored with ginger-garlic paste and several Indian spices. My fusion result is called a tarte tatin de petits oignons perlés à  l'Indienne.

Homemade Kumquat Marmalade Recipe

Homemade Kumquat Marmalade

03.01.09 by Jackie

We've been very lucky this year. Our kumquat trees have produced a bumper crop. Yesterday, the girls brought me a huge bucket filled with beautiful kumquats. When I tasted them, I found them a bit sour, so I decided to make a nice batch of marmalade.

As a child, I ate a ton of marmalade on my vacations to Great Britain, but I have to say the best marmalade I've had is made by husband's friend Laura. She adds a dash of vanilla extract to her marmalade which I think really brightens and accents the citrus flavor. She also makes great homemade vinegar.
