Savory Goat Cheese Panna Cotta with Beluga Lentil Relish (Panna Cotta au Chevre et sa Macedoine de Legumes) Recipe

Panna cotta de chèvre frais et sa macédoine de légumes is a summery dish. It was such a sunny day today in the Bay Area, so I decided to make something refreshing and light.

In case you don't know, panna cotta is a firm jelly. It can be either be savory or sweet. Instead of using gelatin, I used agar for the vegetarians in the house. I paired the panna cottas with mixed vegetables and lentils to get a balanced meal with proteins, dairy and veggies.  

I served them in little verrines. Verrine is just a fancy word for glasses but they are the latest trend in French cooking. If you host a buffet-style dinner, it's the ideal way to run a stress free party as this dish can be prepared in advance.

Chestnut Mousse (Mousse aux Marrons) Recipe

Chestnut mousse, or mousse aux marrons in French, is to die for. In France, I would rarely make it as it is easier to buy the Marronsuis Nestle brand. It's as good as the homemade version. Unfortunately, it is not available in California. I found that my local store carries French chestnut puree, so I bought some and came home and made the delicious goodness right away.

Sable Cookies (French Buttery Shortbread) Recipe

Sablé cookies are very famous in Brittany on the West Coast of France. They are very similar to shortbread, except they are made with egg yolks. They also have a characteristic sandy outside edge and they are very rich in butter. Sablés have a mild sweetness that is a perfect complement for sweet mousses or parfaits.

These cookies take me back in time to my childhood. I remember coming back from school and inhaling them with a huge glass of milk.

Gorgonzola Cheese Souffle

A cheese soufflé is basically a roux folded with egg whites. A roux is a combination of cooked butter, flour and milk. It's the same preparation used for making a bechamel sauce in the Le Mac and cheese recipe. The addition of the gorgonzola cheese is a way for me to cover the "egg-y" smell for the vegetarians in my house.

Gorgonzola cheese soufflés are a perfect meal served with an arugula salad. It's a healthy way to have a light lunch and finish with a much heavier dessert. Fancy some tiramisu parfait afterwards?

Leeks served with a Kumquat Clementine Vinaigrette Recipe

Leeks vinaigrette is a simple and healthy recipe to welcome Spring. The leeks are simply steam-cooked and then drizzled with the vinaigrette. I brightened the vinaigrette with some sweet clementines and kumquats from my garden. The zest of the citrus brings a lot of flavor.

Leeks are from the onion family but their taste is much more subtle and mild. In fact, they have a natural, gentle sweetness that can be paired very successfully with more sour, acidic flavors. If you've never had leeks, it's time to give them a try!
