Coriander Lime Chicken Recipe

Roasting chicken is one of the best ways to showcase the poultry and enhance its flavor. It doesn't require too much skill; really, it’s just about a willingness to get your hands dirty. To ensure a tender and moist result, you’ll need to massage the marinade under and all over the skin of the meat.

The flavorings for the marinade are up to you. All that matters is the inclusion of the tenderizing ingredients to ensure the meat is succulent. Over the years, I've come up with a great combination for a successful roasted chicken, which consists of softened butter or/and olive oil, baking powder, green papaya paste and an acidic ingredient such as lemon, lime (or any citrus) or vinegar. For the remaining ingredients, I chose, garlic, freshly grated ginger, mint, coriander and honey. I also prepared a lime coconut sauce to pair with the chicken. And it was delicious!

Date Cake Recipe (Canadian Inspired Dessert) Recipe

This date cake is inspired by a Canadian dessert. My sister-in-law Lya's friend, Haley, recently made a delicious, moist maple cake. It was so good Lya asked if she could have the recipe so I could replicate it for the family. I didn’t have any maple on hand so I made a variation using date syrup and dried dates.

The cake turned out absolutely divine. It's so moist! But the best part is the date syrup glaze that is a great reminder of the flavor of the dessert and a way to seal the cake for extra freshness, even the next day. Ours didn't make it that far!

Blueberry Almond Tart Recipe

I love blueberries. I usually serve them fresh with yogurt but this time, I made a change and baked them in a delicious almond cream tart. I filled puff pastry dough with homemade buttery almond cream and topped it with fresh blueberries.

When blueberries are baked, they release a beautiful deep blue color onto the almond cream. I didn't want the puff pastry to turn soggy, so instead of using regular tart molds, I placed them into brioche molds that could hold more cream as the cavity is much deeper. The tarts were not overly sweet; I really wanted the blueberries to shine in this wonderful French dessert.

Fried Feta Cheese Stuffed Olive Recipe Recipe

According to Daddy (my father-in-law), any snack tastes better fried. For this particular recipe he came up with, I tend to agree. We recently served feta stuffed olives at a dinner party. At the end of the evening, there was still a bowl full of the black olives leftover. Daddy challenged me and said they would have been all gone had I deep-fried them. The following day, I coated the cheese stuffed olives in a fritter batter and gave them a bath in boiling oil.

 

An entire bowl of fried olives never really made it to the dining table; they were devoured as soon as they were ready. What makes fried olives so tasty is that ther're perfectly crisp on the outside, but still remain soft on the inside. The key to success with these fried appetizers is to make sure you allow the excess batter to drip back into the batter bowl, then place the olives one at a time in the hot oil. I’m big enough to admit it; Daddy was right!

Sardines with Sauce Verte

After giving birth, my doctor reminded me on multiple occasions to get enough calcium in my diet to support my own bone health. Of course, drinking milk and eating dairy products such as cheese and yogurt goes without saying. Another calcium supplement I like every now and then is sardines. They are tasty and very nutritious. I've always loved eating the bones, which are an excellent source of calcium. Unlike swordfish or King mackerel, sardines have a much lower mercury content. 

In this recipe I served the sardines on a bed of Parmesan crisps and flavored them with sauce verte. The green sauce is a very pleasant complement to the fish. It's made of green olives, capers, cornichons (tiny French gherkin pickles), lemon, garlic, Dijon mustard and extra-virgin olive oil. Next time you're looking for a snack packed with omega-3's and lean protein, you might consider making yourself this sardine treat.
