Vegetable Tian Recipe: Zucchini and Tomato Casserole Recipe

A tian is a Mediterranean dish, more specifically from Provence, which consists of thinly sliced vegetables slowly roasted in the oven. It could be made with any seasonally available ingredients such as artichokes, asparagus, eggplant, potatoes, broccoli, carrots, celery or mushrooms. I've also seen it made with meat or fish as well, but today I made a version that is very popular. It consists of garlic, tomatoes and zucchini, which happen to be fresh from our garden. 

I arranged the three ingredients in a terra cotta dish and drizzled on a little olive oil with freshly chopped herbs. The dish is very easy to prepare, and tastes as good as it looks. Thai Curry Cheddar Cheese Sauce Recipe Recipe

A few months ago, I met with my friend Steve from the Milk Pail Market in Mountain view. He's better known to locals as the cheese expert. On that day, I tasted a wide variety of cheeses. Some of them made me reminiscent of my childhood in France, while others were intriguing and unusual. In particular, there was a vibrant yellow cheese I had never seen before. It's called Thai Curry Cheddar cheese. Since Steve knew that I love mixing cultures and flavors, he thought I'd like it.

Of course, like most cheddars, this cheese could be enjoyed with sliced apples and a crusty bread as a snack. But I wanted to really play up the fusion of cultures represented in the cheese, so I used the cheddar to create a Thai-inspired béchamel sauce that would pair wonderfully with any pasta. Good thing Steve gave me some of his new ravioli to bring home!

Instead of using good ol' nutmeg for the white sauce, I flavored it with melted Thai Curry Cheddar cheese, turmeric, ground coriander, ground fennel, freshly grated ginger, ground fenugreek, a touch of cumin and a fresh bay leaf. The result is an aromatic taste with the richness from the cheese. It was a great addition to sautéed ravioli.

Creme de Betterave (Cold Beet Soup Recipe) Recipe

We just picked our last large batch of beets from the garden. I steamed the candy striped beets, red beets and golden beets and blended them with a mixture of bean and rice porridge (I used mung beans). I've started introducing new foods to my 9-month old baby Aria, and the natural sweetness from the beets works well for infants.

It's pretty nutritious and filling for adults too, so I served the same dish for the family dinner but with a twist. I added pistachio paste for extra flavor and coarsely crushed pistachios for crunch. And for the dinner presentation, I topped the thick soup with goat cheese-infused cream. Who said "baby" food can't be delicious?

Quinoa Stuffed Zucchini Recipe

Quinoa stuffed zucchini is not only a delicious and colorful dish, it's also very healthy. I flavored tri-color quinoa with grilled vegetables, grilled haloumi cheese and red beans. I also topped the dish with slices of sun-dried tomato chicken sausage. 

I was able to prepare this dish by using the same grill pan over our barbecue that I used to make yesterday's peach melba. I've included a review of the Technique grill as well, in case you're interested. If after reading the review you can't wait to get your own, I have some great news for you! Unfortunately (and this is purely due to the popularity of the pan), the grill pan is no longer available for sale because it recently sold out. That really speaks to what a great product it is! There's a similar, less expensive Teflon® Brand pan available at IKEA; it has all the advantages of TeflonR nonstick coating, but it's not dishwasher friendly and it's made for the indoors.

Peach Melba with Almond Croquant Recipe

Peach Melba is a refreshing and fairly light dessert. It's normally composed of grilled peaches, vanilla ice cream and raspberry sauce. I had a little fun with tradition today and paired the delicious trio with an almond and peach croquant (croquant pêche amande). The croquant reinforces the peach flavor of the dessert while providing a contrast in temperature to the ice cream. Its crunchy exterior is also a welcome foil to the softness of the grilled peaches. All in all, this elegant dessert will surely impress your summer dinner guests!

Since I received the Technique® Hard Anodized 12"x18" BBQ pan with DuPont™ Teflon®, I almost never do barbecue without this pan anymore. It does an outstanding job of grilling food on our barbecue. The slits let the charcoal essence through and provide beautiful grill marks, while still being small enough to keep the flames out or letting food fall through. The ridges channel the grease and fat from the meat down around the outsides of the pan, stopping it from going onto your barbecue and making clean up easier. This obviously wasn't an issue when grilling peaches, but it's definitely helpful when cooking savory dishes.

The biggest advantage I've found is that you can move food around easily (even with metal utensils) thanks to the non-stick coating. And I love the fact that the pan has tall handles, making it very portable. My only issue with the pan is that it's somewhat large and may be a tight fit for smaller grills. It fits comfortably on our grill, but I believe that they also make smaller versions you might want to look at if you're interested.
