Spinach Avocado Soup with Shrimp Chips Recipe

The idea for this little first course came from an attempt to introduce avocado to my 10-month old baby Aria. The cream soup consists of barley and toor lentils, avocado and spinach. It was so delicious, I thought I'd share the same dish with our dinner guests, with a few alterations, of course. I fancied up the recipe with fresh sautéed spicy crab and Vietnamese shrimp chips called bánh phồng tôm. The velvety texture of the soup against the tasty, cracker-like chips was heavenly.

I love the idea of sharing meals with my daughter, and I’ll share more of our personal favorites. I think I have a little foodie in the making!

Smoked Duck and Fig Tartine Recipe Recipe

“Tartine” is just a fancy word for an open-faced sandwich, using a single slice of bread with several ingredients on top. Growing up, my favorite was a tartine au Nutella, which as the name implies is a slice of bread slathered with the famous hazelnut chocolate spread.

Tartines can of course be savory, and today’s recipe combines, some of my favorite and most decadent ingredients. Fresh figs and red onions from our garden, sinful brie cheese, smoked duck, homemade mayonnaise and pistachios are all irresistible in their own right, and when layered together over a toasted naan, turn any meal into an unforgettable memory. This tartine hits every note; it's sweet, smoky and extraordinarily succulent.

This may be too expensive to be worth serving at a large party. So if you plan to make these appetizers for a group, you might want to substitute another kind of meat in place of the smoked duck.

Pear and Chocolate Lava Cake Recipe Recipe

Yesterday morning I picked a basketful of ripe pears from our garden. I think there are probably about 60 more pears I can gather by the end of the season. Everyday, I give my little baby Aria fresh fruit and vegetables, and at already 10 months old, she clearly adores pears. I made a lot of compote de poire ("pear sauce" in English) and after Aria finished her portion, I used the remainder and made chocolate lava cakes. The molten chocolate center paired with chilled pear sauce is absolutely fabulous.

If you're looking to impress guests with an elegant chocolate dessert, search no more. I served this dish last evening for our special guest, a monk who came to visit all the way from 'Đà Lạt, Vietnam. He assured me he had never tasted something so good!

Anchovy Vinaigrette Recipe

I had an opened jar of anchovies in the refrigerator from the photoshoot I did for my upcoming cookbook (Haute Potato, out this December). Since I'm the only one in our home who likes the oily, salted fish, I came up with a simple way of putting it to good use. I found the anchovies to be a bit too salty to my taste, so I ran them under cold water, then ground them into a paste. The flavor-packed mixture became the base of a salad dressing. The rest is really as it pleases you; I added a bit of horseradish mustard for a little heat, fruity extra-virgin olive oil and Champagne pear vinegar for a touch of decadence.   

The salad was composed very simply of hard-cooked eggs, tomatoes, pine nuts and butter lettuce. Voilà!

Roasted Chicken and Apple Panini Sandwich Recipe Recipe

My morning ritual of working out, listening to the French radio via podcast and reading the messages on PhamFatale.com has grown by one activity; gathering the ripe fruits and vegetables from our garden. The past few weeks we've had gorgeous, sweet apples, which my baby Aria has fully enjoyed. I usually end up with a little leftover apple sauce, which I used to make these panini sandwiches.

After this long weekend, my husband's youngest sister is heading back to school (she's entering third grade already!), so I packed her lunch and prepared a hot sandwich that can also be eaten cold. Balsamic roasted chicken breast strips, smeared with the aforementioned leftover homemade apple sauce and cheddar cheese are nestled between two slices of pizza lavash. With a little grilling and pressing, you'll have a panini that is packed with flavor and pretty healthy to boot. This is one "back to school" sandwich you may start packing for yourself as well.
