Plantain Stuffed Sweet Peppers

I've spent all summer working out with Lya, my husband's teenage sister. We're not aiming to lose weight but to be healthier and get our muscles toned. We don't diet but we watch what we eat. Today, I prepared multi-colored mini sweet peppers and stuffed them with a combination of mashed plantains, cannellini beans and crushed potato chips. 

I kept the menu gluten free and paired the plantain-stuffed mini peppers with garlicky quinoa. It's amazing how delicious this healthy dish was; it was satisfying, flavorful and quite filling. Now, back to the treadmill!

Lavash Bread 'Sushi' Pinwheel Recipe Recipe

If you’re intimidated by the thought of making sushi, this recipe is a great place to start. These sushi-syle pinwheelsl are much easier than the real thing, but still delicious. No nori sheets or rice are involved. Instead, I used soft flatbread, roasted red bell pepper hummus, crunchy shredded carrots, wasabi-flavored avocado, edamame beans and spinach leaves. They can be served as appetizers for a dinner party; to ensure they don't fall apart, secure them by tying cute bows around the "sushi" using garlic chives. Remember, you eat with your eyes first!

If you happened to stop by the Gilroy Garlic festival this weekend, you may have come across the California Lavash booth. I absolutely love their artisan flatbread and used it in this dish. Their new look has officially launched and it should be hitting Whole Foods shelves in a few weeks; I’m personally excited about that because you'll be able to see my photos on the new packages!

Portobello and Chickpea Burger Recipe Recipe

Portobello mushrooms are a great meat substitute in burgers. The downside to them is the lack of protein. To compensate, I stuffed the Portobello mushroom with a chickpea patty. I blended the chickpeas and flavored the mixture with spicy garlic chutney (lesahn ki chutney) and added breadcrumbs and finely diced jicama.

I pan-fried the chickpea and Portobello bugers and paired them with marinated artichokes, lettuce, mini red sweet peppers and chipotle salsa. I nested everything in goat cheese-filled toasted English muffins. THese are so tasty, they'll even satisfy the meat eaters in your life!

Veal au Poivre Recipe

In my opinion, the best place to get tender cuts of veal in the US is a halal meat market. There seems to be more turnover of veal products in general. It’s cheaper than Whole Foods and fresher than the Asian market.

I bought boneless veal chops to make this steak au poivre recipe. It’s an easy dish to prepare, so the key is to prepare a flavorful sauce to accompany the meat. I made the sauce with green peppercorns and a splash of Cognac brandy. Instead of serving the veal au poivre with potatoes, I paired it with a tasty pumpkin and sweet rice purée. It’s a nice change of pace from your average steak and potatoes dish!

Grilled Lobster Tail Recipe

I prepared lobster over the weekend because I wanted to cook something gourmet in honor of Bastille Day (the French equivalent of Independence day, but on July 14th). It's not a traditional thing to serve in France for Bastille Day, but it was a great excuse to make good use of our barbecue grill and cook up some seafood.

The dish is ultra easy. I simply grilled halved lobsters and garnished them with tarragon, chives, garlic and lemon, then drizzled them with truffle oil. It was almost too sinful to eat, but somehow I managed to find the strength!
