Canh Ngot Recipe (Vietnamese Fish Soup) Recipe

My friend Hoa is an expert when it comes to buying the freshest, most delicious ingredients. I've probably said it in the past but I only cook seafood according to what's available at the market. She told me about this wonderful seafood market on Tully road in San Jose, and boy, was she right! Today I found freshly caught cá hồng, which translates to "red snapper". I made cá nấu canh ngót, a Vietnamese popular fish soup made with Chinese celery.

The texture of the soup is similar to canh chua the difference being that lemon juice is squeezed right in before eating the soup and no lemon or sour ingredients are added to the broth while cooking. You'll be amazed at how simple and easy this seafood soup is to make. The key to success is really just fresh ingredients. That's it!

Bún thịt nướng is my kind of comfort food. It's a simple Asian meal that consists of room-temperature rice vermicelli noodles and đô chua (pickled veggies) topped with grilled meat. I marinated two rib-eye steaks with soy sauce, oyster sauce, ginger garlic paste, palm sugar, green onions and sesame seeds.

The ingredients that accompany the rice noodles can vary. I made this version with my favorites: sautéed crab (cua), shrimp (bún tôm nướng) and grilled beef (bún bò nướng). Of course, you could adapt this meal with fried fish (bún cá chiên), chicken (), eggrolls (bún chả giò thịt nướng) or even lemongrass tofu (for a vegetarian version). What I like most is that it's light and healthy without being too terribly difficult to make (I prepped everything separately the day before). And it doesn't hurt that it looks so appetizing!

Shrimp Crostini with Saffron Aioli (+Saffron Giveaway) Recipe

This is a recipe that combines two of my favorite ingredients: shrimp and saffron. Specifically, I made a shrimp crostini with saffron aïoli. I flavored the mayonnaise with garlic and freshly ground saffron threads. I placed the shrimp on a bed of toasted bread to create a nice contrast of texture. The taste of the saffron is so intense in the aïoli sauce that it feels almost sinful.

Mi Do Bien Recipe (Seafood Noodle Soup Recipe) Recipe

It's been windy and cloudy in the Bay Area and we just changed all the comforters and blankets, so everyone is comfy and cozy in their beds. Having hearty, warm meals helps out a lot during the rest of the day, and being Vietnamese, I can’t think of anything heartier than soup. Soup is probably the quintessential comfort food in Vietnamese cuisine. I’ve made many types in the past, and today I created a Vietnamese egg noodle soup with seafood, called mì đồ biển.

The soup consists of flavorful fish stock with fresh egg noodles, shrimp, quail eggs, baby squid and halibut (or any white fish). It is completed with Chinese chives (called hẹ in Vietnamese) and green onions.

Canh Chua Tom Recipe (Vietnamese Shrimp Soup) Recipe

Canh chua tôm literally translates to "sour shrimp soup" in Vietnamese. The name and the flavor come from the combination of kaffir lime leaves, tamarind and pineapple. A hint of spiciness from Thai chiles makes the soup especially soothing. I've been a bit under the weather the past few days and the warm broth worked wonders on my congestion.

There are many variations of this seafood recipe. In this particular version, I mixed oyster mushrooms and fresh water chestnuts, which added crunch to the soup. I served it as a main course, so I added rice round noodles to make the meal complete. If you decide to serve it at an Asian-themed dinner, this canh (soup) is a light way to start a meal.
