Bun Bo Nuong Recipe (Vietnamese Beef Noodle Bowl) Recipe

This weekend, we had a lot of company, so we prepared one of my favorite party recipes: bún bò nướng. This one-dish meal is the kitchen sink dish of Vietnamese cuisine. Tender, boneless beef is grilled and topped with mở hành (onion oil). Then the steak is thinly sliced and served with room-temperature vermicelli rice noodles, roasted peanuts, lettuce, cucumber, bean sprouts and mint. But we didn't stop the feast there; I added bánh cuốn (steamed roll cakes), fried sweet potato and shrimp (bánh tôm chiên dòn) and bì (shredded meat).

The whole bowl is flavored and drizzled with nước mắm chấm (fish sauce) and eaten with chopsticks. Give it a try and you'll want to eat this everyday!

The winner of this week's giveaway is Amanda O. (please contact me back so I can get your mailing address). Congratulations and I hope you enjoy using my first cookbook about gourmet potato dishes as much I did developing the recipes!

Tomato Crostini with Anchoiade Recipe

Tomato Crostini with Anchoiade

07.16.12 by Jackie

After Mike from New West KnifeWorks sent me their 9-inch Chef Fusionwood knife, I went on a crazy chopping spree. Just like many of their knives, which are, by the way, all manufactured here in the US, this Chef knife is pretty nifty. I chopped a tomato medley (Heirloom peach tomatoes, yellow pear tomatoes, sweet 100 and San Marzano tomatoes) with a few grapes from our garden. With the razor-sharp blade, I was able to comfortably cut all the fruits. I quickly sautéed them in garlic with roasted green bell peppers and sweet peppers that my husband Lulu planted several months ago. I used the mixture as a topping for crostini and finished them with Manzanilla green olives wrapped in anchovies.

New West KnifeWorks is giving away a block set of 7-piece Fusionwood knives (a $995 value!) and you have a chance to win. Sign up for the contest through August 13th to win one of the 7-piece block sets on Facebook and Twitter. You can also register on New West KnifeWorks' microsite. Good luck!

Canh Tan O Recipe (Vietnamese Chrysanthemum and Shrimp Soup) Recipe

Canh tần ô is a very common Vietnamese soup. It consists of chrysanthemum leaves and shrimp balls in a thin broth. It's a very healthy, light meal. I added a few scoops of steamed jasmine brown rice to make the meal complete.

I'm giving losing the baby weight another go, and this is my "day 1" meal. Wish me luck!

Tandoori Shrimp Recipe Recipe

Tandoori Shrimp Recipe

04.04.12 by Jackie

Tandoori shrimp is a seafood dish fit for a feast. The preparation isn't all that complicated; the marinade is the same as for the similarly-named chicken dish. It consists of ginger garlic paste, yogurt, garam masala, turmeric and chili powder. I also add paprika so the color is vibrant without being too spicy. Once the marinade is complete, you can use it for meat, fish or even paneer cheese; you name it. Tandoori paste is a true culinary chameleon.

I made this dish 'way back during the summer and completely forgot to share the recipe. I've been working on an exciting photo project these days (I'll tell you the good news soon!) and found this jumbo shrimp photograph in my image organizer as I was editing my previous food photography work. We made it for a barbecue. It was a very relaxing day and I really didn't want to slave in the kitchen. I just placed the colossal  shrimp in the marinade and my husband's cousin was in charge of grilling. Of course, you don't need to wait for warmer days; simply use a griddle pan and I promise your guests will definitely be in for a treat.

Banh Canh Recipe (Vietnamese Shrimp Broth with Udon Noodles) Recipe

Bánh canh tôm is what I consider comfort food. The warm broth with thick, chewy Vietnamese tapioca noodles is very satisfying. Unlike the usual comfort food you might expect, this Vietnamese soup is pretty healthy. I made this banh canh variation with "tôm" (shrimp), homemade fish balls made by our family friend, Co Nho, and pieces of yellowtail snapper. This specific fish works well because of its mild aroma and firm texture when boiled.

In my opinion, the most important part of soup dishes such as pho or bun mang ga is how flavorful the broth is. I made a shrimp stock using shrimp shells. You could also add coconut milk but I didn't as I'm trying to watch my weight!
