Spicy Beet Pizza Appetizer Recipe Recipe

Here's a fusion version of pizza made with spicy beets. The pizza dough is baked separately then topped with Indian beets and dal. It's perfect for vegetarians since it's packed with protein. 

I usually serve them as appetizers. They would also be a great addition to a party platter because of the pop of color and exotic flavors.

Beet Mozzarella Salad with Gorgonzola Dressing Recipe

I love this salad as a light lunch meal, especially with the flavorful gorgonzola salad dressing. Alternating thin slices of mozzarella and red beets make up the core of the salad; I placed them on a bed of arugula and flavored them with a leek vinaigrette. Lightly toasted pine nuts added a little crunch.

Serve with slices of toasted sourdough rye bread and you'll be satisfied for the rest of the day.

Creme de Betterave (Cold Beet Soup Recipe) Recipe

We just picked our last large batch of beets from the garden. I steamed the candy striped beets, red beets and golden beets and blended them with a mixture of bean and rice porridge (I used mung beans). I've started introducing new foods to my 9-month old baby Aria, and the natural sweetness from the beets works well for infants.

It's pretty nutritious and filling for adults too, so I served the same dish for the family dinner but with a twist. I added pistachio paste for extra flavor and coarsely crushed pistachios for crunch. And for the dinner presentation, I topped the thick soup with goat cheese-infused cream. Who said "baby" food can't be delicious?

Caviar Tower with Beet Carpaccio Recipe

I came up with this elegant starter for a dinner party we hosted. I knew I was going to have to spend a lot of time on the main course, so I opted for a dish that was quick and easy to assemble. It's made of four flavorful layers: crème fraîche flavored with beet green pesto, pumpkin seed-crusted Russian rye bread, grilled beet carpaccio and a luxurious caviar topping.

I always make extra pesto that I store for later use. If you're storing frozen pesto cubes as I've suggested in the past, this is a recipe that you can whip up very easily. I also used freshly picked beets from our garden, grilled them on the barbecue and thinly sliced them with a mandoline. If you're looking for a vegetarian alternative to caviar, you could always replace it with roasted red bell pepper red pesto-flavored quinoa caviar. Either way, this first course is as appealing to the eye as it is to the stomach.

Here's another simple summer vegetable recipe using the barbecue grill. Whole unpeeled beets are placed over the coals of the barbecue grill and cooked until the skin is burnt. I let the beets cool to room temperature and seasoned them with a few fresh herbs, lemon juice and extra-virgin olive oil. The beets turned sugary sweet. Roasting them turned out to be a great way to showcase the results of Lulu’s hard labor to everyone during our Fourth of July barbecue.
