Vegetarian Stir Fry Recipe: Tofu with Beans and Carrots Recipe

I hadn't cooked tofu in a while and my husband Lulu asked for a vegetarian stir fry. I've wanted him to eat healthier, so I was happy to oblige. The base of the stir fry contains carrots, green beans and onions from Full Circle. To this, I added some kumquat jelly I made last winter (you could use any kind of sweetener you like) and a mixture of fresh garlic and red Thai bird chiles Lulu planted early this Spring. It's just the right combination of sweet and spicy, and I love that the recipe is flexible enough to make use of whatever you have on hand.

Chili Stuffed Mushrooms (Vegetarian Appetizer Recipe) Recipe

If you thought chili couldn't be the basis for an elegant appetizer, give this recipe a try! I had leftover vegetarian chili, so I scooped it into stemmed crimini mushrooms. I baked them for 20 minutes, sprinkled on a combination of queso manchego and Oaxaca cheese and then baked them again until the cheeses melted.

After placing them on the table, I just turned my back for a few minutes and the appetizers were all gone. Everyone asked for more, and since these little bites are pretty nutritious, I had no problem obliging!

Creme de Betterave (Cold Beet Soup Recipe) Recipe

We just picked our last large batch of beets from the garden. I steamed the candy striped beets, red beets and golden beets and blended them with a mixture of bean and rice porridge (I used mung beans). I've started introducing new foods to my 9-month old baby Aria, and the natural sweetness from the beets works well for infants.

It's pretty nutritious and filling for adults too, so I served the same dish for the family dinner but with a twist. I added pistachio paste for extra flavor and coarsely crushed pistachios for crunch. And for the dinner presentation, I topped the thick soup with goat cheese-infused cream. Who said "baby" food can't be delicious?

Garlic and Basil Tomato Sauce Recipe Recipe

My husband Lulu planted 19 types of tomato plants and we're picking more tomatoes than we can possibly eat. It took Lulu and his youngest sister almost 2 hours to pick 11 pounds of Sungold, Sweet Million and San Marzano tomatoes. They also brought in 4 very flavorful red onions. If you know me, you know I hate when food goes to waste, so I made tomato sauce out of necessity. 

I got the girls involved and asked them to stem and cut the tomatoes and onions. It didn't take much effort, especially with the help of my strong, toned and muscular (since they've become my morning workout buddies) sisters-in-law. It doesn't take many ingredients to make a delicious thick tomato sauce. I used exactly 7; tomatoes of course, garlic, red onions, fresh thyme, basil, salt and Bhut Jolokia Ghost Pepper Sauce that I received from my friend JD Cowles (check out my product review) at All Spice Cafe. I deep-fried large morsels of fresh garlic, caramelized the onions and stewed the tomatoes for 1½ hours. I haven't tried canning tomato sauce yet because of a fear of botulism, but this time it wasn't even necessary since all the tomato sauce was so good it was gone after two meals!

Quinoa Stuffed Zucchini Recipe

Quinoa stuffed zucchini is not only a delicious and colorful dish, it's also very healthy. I flavored tri-color quinoa with grilled vegetables, grilled haloumi cheese and red beans. I also topped the dish with slices of sun-dried tomato chicken sausage. 

I was able to prepare this dish by using the same grill pan over our barbecue that I used to make yesterday's peach melba. I've included a review of the Technique grill as well, in case you're interested. If after reading the review you can't wait to get your own, I have some great news for you! Unfortunately (and this is purely due to the popularity of the pan), the grill pan is no longer available for sale because it recently sold out. That really speaks to what a great product it is! There's a similar, less expensive Teflon® Brand pan available at IKEA; it has all the advantages of TeflonR nonstick coating, but it's not dishwasher friendly and it's made for the indoors.
