Spanish Rice Recipe

Since I have to please a large crowd of vegetarians in the house, I'm always looking for ways to make my dishes more flavorful and nutritious.  Traditional Spanish rice is already packed with flavor, so with the addition of just a few ingredients it can become a complete meal. To the standard blend of white rice, onion, tomato, garlic and cilantro, I add protein in the form of cannellini beans and vegetarian chorizo.  I finish the dish with a little saffron and Tabasco for an additional kick of fragrance and flavor.

For the non-vegetarians, I make a ground lamb chorizo that I add to the Spanish rice instead. This way everyone is happy, and it's not a lot of additional work for me.

Palak Paneer (Fried Indian Cheese in Garam Masala and Cream Spinach) Recipe

There are few dishes as synonymous with Indian cuisine as palak paneer . After tandoori chicken and naan (Indian round fluffy bread made of white flour), it's probably the most common item on menus at Indian restaurants. Variations of the dish are prepared all across the country.

At the core, though, palak paneer is a very simple dish. Spinach (or palak in Urdu) is cooked with a spicy cream mixture and studded with fried Indian farmer's cheese, called paneer. The cream is spiced with the same masala that is used in many other dishes. If you're new to Indian cuisine, this is a great introduction. You'll never go back to regular old cream spinach again.

Red Bean Salad served with a Spicy Cilantro Vinaigrette Recipe

Red bean salad is such an easy dish to make. All you have to do is toss some red kidney beans, shredded pickled carrots, corn kernels and other colorful veggies and you're ready to please a large crowd. It's an especially good complement of proteins for vegetarians. Just serve with crostini (thinly sliced grilled bread drizzled with olive oil) or garlic bread (for the carb) and you're ready to go.

I got inspired by Chrystal and Amir, the wonderful folks from The Duo Dishes.  They created an amazing flavorful spicy cilantro vinaigrette that I thought would go perfectly with my salad.

Asparagus Risotto Recipe

I recently made a rather unconventional risotto with bamboo. I chose bamboo because it has a very similar texture to asparagus, which is a very traditional element in risotto. You need to know the classics in order to come up with your own twist.

Lulu had a craving for the starchy arborio rice dish. Asparagus are in season so I thought it was the perfect opportunity to please my hubby and to share this recipe with you. Enjoy!

Garam Masala Spice Mix Recipe

Garam Masala is often used in Indian cooking. It's a blend of several Indian spices like cumin, cinnamon and turmeric. It takes a little time but it's so worth it. The result is so much more fragrant than the store-bought jars. It is used in a variety of Indian dishes, such as Tandoori chicken, palak paneer, dahls (lentils) and my Tandoori glazed roasted white seabass.

Masala in Urdu means "paste" and garam means "hot", and oh boy, believe me, it's full of spices!
