Crumpets are very similar to pancakes, but they are much smaller. I love the characteristic holes on top. Those holes are a result of the addition of extra baking soda to the yeast batter. Crumpets are perfect either savory or sweet, and just saying the name sets the perfect mood for a fancy tea party or Sunday brunch.

I hosted a dinner for vegetarians tonight, so I served the crumpets as appetizers. I placed a little dollop of crème fraîche and vegetarian quinoa caviar on top. It was so good.

Vegetarian Sizzling Rice Soup

Yesterday, I promised that I was going to post a recipe about how to make sizzling rice soup. So I reserved 1 cup of parched rice from the Indian puffed rice snack we made yesterday, called chudwa in Urdu.

My favorite part of making sizzling soup is the sound of the freshly fried puffed rice in contact with the broth. It always amazes the kids. My poor Lulu's caught a bad cold so the warm broth really helped soothe his throat.  And he's a big kid, so the sizzling amazes him too!

I added water-chestnuts for crunch and miso and tofu for protein. The result is a very healthy and flavorful soup that you can enjoy as a starter or as a full meal.

South Indian Spicy Nut and Puffed Rice Snack (Chudwa) Recipe

Chudwa, sometimes called chevda, is for South Indians what trail-mix is for us. It's a blend of nuts, dried fruit, puffed rice and various typical Indian spices.

It's very easy to make, but like eggrolls, it's time-consuming. It's a big production. One of my sisters-in-law is in charge of assembling the ingredients. My mother-in-law is the one frying the puffed rice flakes. One other sister's job is to sprinkle the spices as soon as the ingredients are out of the oil. My job is to toss the whole thing and, last but not least, the other 2 younger sisters' job is to taste.  It's a tough job, but somebody has to do it.

Vegetarian Tajine Recipe

Vegetarian Tajine

Tajine is a Moroccan dish that is named after the special pot in which it is cooked. It's a melting pot of savory and sweet flavors and it's a staple in Mediterranean cuisine. I love all its interesting ingredients like saffron, cinnamon, cumin, ginger, apricots and sun-dried tomatoes.

A lot of my cooking is my own improvisation. I went into the garden and found only 5 apricots that were fully ripe. We've had a lot of problems lately with animals like deer, squirrels and rabbits eating the fruits of Lulu's labor. Of course, this would have never been enough for a tart or preserve. I had a few potatoes, some sun-dried tomatoes and tofu. Eating them as is would have been an option but I thought I would use them to make a vegetarian tajine.

There was a lot of the leftover sauce, so I saved it to make a real lamb tajine stew the next day. All I have to do is run to the store and buy some lamb shanks.

Roasted Blue-Cheese and Walnut Stuffed Figs  Recipe

I'm so excited we finally were able to get some fresh figs from our garden. The girls started stuffing themselves with a lot of the figs but I managed to save a few to make this little starter for dinner.

The concept is so easy, a kid could make it! Just caramelize the figs in the oven, stuff them with any kind of soft cheese and sprinkle some nuts. Ta-da!
