Vegetarian Fried Rice Recipe (Com Chien Chay in Vietnamese) Recipe

Yesterday, we had a lot of relatives over and after dinner there was leftover steamed jasmine rice. I wasn't going to let the rice go to waste; I usually make cơm chiên chay ("vegetarian fried rice" in Vietnamese). That way my husband Lulu and his sisters who are all vegetarians, can make it disappear!

I also happily discovered that baby Aria absolutely loves fried rice. I’m thrilled because this dish is super easy to prepare. Once you know the tricks to keep the rice from turning soggy and mushy, you can make it as often as it pleases you, with whatever veggies you have on hand.

For this version, I mixed carrots, peas, corn, red and green bell peppers, green onions and diced fried tofu with the jasmine rice. I didn't add any egg so the rest of the family could enjoy it as well.

As a child, Maman would always tell us kids not waste food; it's "tội chết" ("dreadfully sinful" in Vietnamese). As an Asian mom, I'm definitely keeping the family "tradition" and teacingh the same ethic to my daughter Aria.

Fig Noor Bread Cake Recipe Recipe

Fig Noor Bread Cake Recipe

08.30.13 by Jackie

This fruity bread dessert is so delicious you won't believe it only requires 5 ingredients. No egg, no baking time and no more than 30 minutes prep time.

I cut black sesame and caraway Noor bread into small pieces and soaked them in hot fig preserves. Once the preserves were chilled, the cake jelled into one entity. I served the fig Noor bread cake with tangy crème fraîche for richness and pineapple and raspberries for a touch of acidity to balance the sweetness of the preserves.

Last weekend, my good friend Laura, who's a jam expert, came over and picked 15 pounds of Black Mission figs in our garden. Aria and I helped gather as much fruit as possible so she could prepare her yummy fruit preserves. While selecting the ripe fruits, we chatted and Laura told me she would try a new technique.

The idea was to find a method that doesn't require pectin. To make the preserves, Laura started by combining water and lemon juice. After bringing the liquid to a boil, she stirred in sugar and brought the temperature to 250°F. Finally, she added the figs and vanilla beans and cooked the mixture at 220 degrees until jelled.

I also have an announcement for this weekend. I'm going to be making a stop in Houston, Texas for an interview with Cleverley Stone on CBS Radio 650 AM at 10am Saturday. Tune in if you can, because a lucky listener will win a free copy of my cookbooks. Then I head to Barnes & Noble to sign my just released cookbook,Banh Mi, and my previous book, Haute Potato. Make sure you stay to sample a dish featured in Banh Mi! Hope you stop by and say hi!

Pizza Cracker Recipe Recipe

Pizza Cracker Recipe

08.29.13 by Jackie

If you want to have a healthy late night snack, these savory pizza lavash crackers are for sure going to satisfy your appetite. Leftover lavash bread, thick tomato sauce, marjoram, thyme, oregano, crushed red peppers and Parmesan cheese are all you need to make the perfect crowd pleaser.

The spiciness from the crushed red peppers makes them so addictive. You can also prepare a sweet version with apples and cinnamon, if you prefer; these crackers are as delicious as their savory equivalent.

Grilled Naan Margherita Pizza Recipe Recipe

Margherita pizza is a delicious yet very simple concept: pizza dough is smeared with flavorful tomato sauce topped with fresh mozzarella and freshly-torn basil leaves. I used whole grain naan instead of the pizza dough, so the preparation time was even shorter. To cook the naan pizzas, I placed them on the barbecue grill and let them cook until the cheese was warm and melted.

The folks at California Lavash have just officially launched their new look. The cool looking packages feature my photos and I absolutely love how they turned out. But most important, there are now almost a dozen varieties of their artisan, all-natural flatbread, ranging from naan, sangak and noor to regular lavash flatbread.

Lavash Spanakopita (Palak Paneer Purses) Recipe

This is an Indian take on the classic Greek fare  with a healthy twist. I prepared the savory "pastry" with spinach-flavored lavash bread and used palak paneer as the filling.

Many Indian dishes are served family-style and this is a great way to turn palak paneer into individual servings. We had many guests over the weekend and I served these fusion-style appetizers with raita sauce on the side.

Quick note: I'm going to be in Houston this weekend for my first interview with Cleverley Stone on her show on CBS Sports & Entertainment Radio this Saturday, August 31st at 10 am. Then I will be heading to Barnes & Noble at 2 pm for a cooking demo, followed by a book signing. If you live in Houston or in the area, stop by and sample some of the food from my second cookbook, Banh Mi.

Barnes & Noble Fairway Market Place, 5656 Fairmont Parkway, Pasadena, Texas  at 2pm on Saturday, August 31st, 2013.  (No need for the ZIP code, since people won’t be mailing anything to you there.)
