Pumpkin Pot Pie Recipe

This "tourte au potiron" (French for "savory pumpkin pie"), is my kind of cold-weather comfort food. And it’s a real hit with the family, especially given the fact that everything is made from scratch.

As with any pie, the two parts that need to be properly executed to have a successful dish are the filling and the crust. The pumpkin filling is flavored with a hint of heat from red chili flakes, a bit of mascarpone cheese and a few cubes of Dubliner cheese for extra nutty saltiness. Perfect flakiness of the crust requires a few key steps. First, use cold diced butter and ice water and knead the dough as little as possible. Second, allow the dough to rest in the refrigerator (or freezer); before filling, lightly brush the bottom of the "tourte" with egg white to seal and "water-proof" the dough. Last, once the pie is folded, sealed and firmly pressed on the edges, brush the top of the pie with an egg wash. Preparing homemade pie crust is literally easy as pie; plus your meal will look rustic and taste delicious. 

My philosophy is to not restrict my diet too much as long as I eat in moderation and work out regularly. An important thought to keep in mind during the holiday season!

Yam Burgers with Roasted Brussels Sprouts Recipe

I hope you had a lovely, relaxing Thanksgiving weekend. We decided to escape the Black Friday craze and stayed home, baking and cooking a lot. I still had a loaf of artisan bread, a few yams, roasted Brussels sprouts, miso gravy and cranberry sauce left.

The obvious dish that came to mind was to make "yamburgers". I served them in toasted brioche buns with cranberry sauce and a roasted garlic butter spread. They fit my Meatless Monday tradition perfectly!

Thanksgiving Potato Recipes

I'm sure there is going to be at least one potato dish at your Thanksgiving table tomorrow evening. Our family loves potatoes and we're planning on splurging on many variations. There is a myriad of culinary possibilities for preparing the vegetables: roasted, boiled, steamed, baked, fried, or mashed. 

Here are a few potato dishes that have been featured to date on PhamFatale.com. You can also find gourmet potato dishes in my first cookbook, Haute Potato, which is an ode to this root vegetable. In this book, I’ve included one of my favorites, which hails from India: a spicy potato cutlet stuffed with ground beef, or kheema. To illustrate the versatility of potatoes, the book is separated into chapters based on the primary flavor profile or texture of the dish. Each section is an exploration of the ways in which the potato can be used. So, though it may start its life in the ground, when combined with the right techniques and ingredients the potato can truly be haute cuisine. Polenta Stuffing Recipe

I developed this new stuffing recipe when I had leftover polenta croutons I had fried for making salad. The preparation is the same as for bread stuffing. I flavored the polenta stuffing with earthy ingredients such as brown mushrooms, chanterelle mushrooms, sun-dried tomatoes, red, orange and yellow bell peppers and marinated artichokes. 

This stuffing version is perfect if you have gluten-inloterant guests on Thanksgiving. And you won't be missing bread, either. Also, you could serve it tamale-style in corn husks to keep it warm.

Truffle Mushroom Risotto Stuffed Baked Apples Recipe

This is an upscale version of risotto that you could offer as a side dish (or main vegetarian course) on Thanksgiving. I love including lightly sweet ingredients in savory dishes, so I came up with the apple and mushroom risotto. I used Jonagold apples, brown mushrooms and truffle butter. 

I think making individual servings give a more elegant look to the dish, so I nested the luxurious risotto in baked apples. The apples almost turned into apple sauce which paired beautifully with the risotto.
