Lentil Stuffed Portobello Mushroom Recipe Recipe

I'm presenting to you another vegetarian recipe for Meatless Monday. I pan-seared Portobello mushrooms that I stuffed with lentils and various colorful vegetables.

Our family is heading to Europe this summer and I'd like to be able to fit into a bikini this season, so this hearty, yet super-healthy dish will not only satisfy our taste buds but will also help us look trim in a few weeks.

The recipe is gluten free because we recently found out my mother-in-law is gluten intolerant. I served the mushrooms with pan-fried polenta medallions and garnished the dish with crumbled French feta cheese.

S'more-Inspired Dessert Recipe Recipe

S'more-Inspired Dessert Recipe

I'm not sure  who  invented the s'more dessert or when. What I do know is it's an abbreviation for "some more".

It's our family's tradition to light a camp fire right after using our barbecue. Since my childhood friend Alexia and her family are visiting from Paris, I wanted to give them the very American experience of molten marshmallows tucked with a piece of chocolate in between graham crackers.

We had leftover marshmallows, so I made a variation, an "indoor" s'more, combining a vanilla cake, marshmallow, peanut butter, raspberry liqueur, chocolate and a few dried fruits. My guests did, indeed, ask for some more!

Vegetarian Wild Mushroom Pate Recipe Recipe

Living with so many vegetarians in my home, I always challenge myself to develop new meals that fit our family's diet. Daddy, my father-in-law (he's allergic to mushrooms), is out of town this week, so this wild mushroom pâté worked fine for last night's dinner. If, like me, you're not a vegetarian, this vegetarian dish is proof that vegetables such as mushrooms can be as satisfying as meat.

I used a combination of fresh thyme, morels, chanterelles, shiitake and Portobello mushrooms. They're rich in umami, which is the savory flavor quality that sorts of mimics what we get from meat.

Marble Cake Recipe (Marbre au Chocolat) Recipe

If you were born in the 80s and lived in France, you probably know of the marble cake called Le Savane de Papy Brossard. Ça a bercé mon enfance, which I'd translate to "it sweetened my childhood". This coffee cake is a marbré cake. The beauty of this cake is its appealing look once sliced with its gorgeously marbled, streaked appearance made of vanilla and chocolate.

A generous amount of quality butter and a little milk made the cake moist and fluffy while milk chocolate provided the contrast in color needed for this sweet treat. I think the result was very close to the one I had when I was a child. My hope is that baby Aria will keep the same fond memories of this chocolate marble cake once she grows up!

Summery Bulgur Napoleon Recipe Recipe

Summery Bulgur Napoleon Recipe

05.13.14 by Jackie

With the beautiful summery weather we're having, a refreshing savory mille-feuille that consists of bulgur is ideal to cool off. A mille-feuille in French literally translates to "thousand leaves" but in fact it's just a fancy name for layered puff pastry (the famous Napoléon).

I flavored the bulgur with marinated artichokes, red, green and yellow roasted bell peppers, shiitake mushrooms and a lot of mint. The pastry layers were simply brushed with an egg wash, sprinkled with herbes de Provence and a little cheddar cheese and baked until completely puffed. I tried to create a visually appealing dish bursting with colors and invigorating flavors, and i have to say, mission accomplished. Remember, we eat with our eyes first!
