Onion Curry Risotto Recipe (Fusion Dish) Recipe

On any given night, there are dishes from two or more cultures on our dining table. And I often combine the leftovers to make something new the following day. As an example, we recently had some extra  dopiaza (onion duo curry), which I used to flavor risotto. The onion gravy melded with the creamy Arborio rice and came out beautifully.

I've come up with several recipes using this flavorful curry, such as onion tatin tart, onion-filled manicotti and gratin casserole dishes. If you browse through the site, you'll find other recipes to help you waste less food and save money at the same time. It works for my family, so it should work for yours as well.

Sauce for Steamed Artichokes (Tofu Dressing Recipe) Recipe

Artichokes are harvested year-round but I usually notice an increase in quantity and quality starting in March. We live near Castrovilleso I can find artichokes in abundance this season. Normally, I would make a flavorful aïoli to dip the artichoke leaves in. But given the extra few pounds I need to shed from my baby weight, I experimented with a healthier alternative. I made a quick and easy sauce with silken tofu and the usual ingredients I would use for vinaigrette.

The result is a creamy, tasty sauce without any funkiness from the tofu. This proves that you don't necessarily need to add melted butter, garlic and lemon to make an artichoke flavorful.

Mash Ki Daal (Dry Urad Dal Recipe) Recipe

Daddy, my father-in-law, needs his daal ("lentil" in Urdu) fix daily. We usually make the wet, soupy version, which he considers tastier because of baghar (common red chili oil layer). But every now and then, Daddy asks for sukhi mash ki daal. "Sukhi" is in reference to a dry lentil preparation. I used urad dal and cooked the lentils with caramelized onions, fresh chiles, garlic, ginger and cumin seeds.

Urad dal is a great source of protein and iron and it's pretty low in calories. The caramelized onions provide the extra oomph of natural sweetness and are balanced with a little kick from the freshly grated ginger. The result is as tasty, healthier version of an Indian staple. We usually make mash ki daal with freshly homemade roti (Indian flat bread). Daddy often likes to spread a little bit ghee (clarified butter) when my mother-in-law's not watching!

If you have leftover lentils, you can add grilled vegetables the following day. It makes a great salad for a light lunch.

Lemongrass Tofu with Daikon Recipe

Lemongrass Tofu with Daikon

03.12.12 by Jackie

Lemongrass is a wonderfully fragrant herb. If prepped and cooked properly, it adds not only flavor but also a great texture to vegetables, meat, fish or tofu.

I used the lemongrass in this dish as a coating for the tofu (tàu hũ xào xả). Daikon radish (củ cải trắng in Vietnamese) provides contrasts in both texture and flavor. I think the way the daikon is cut dramatically changes the texture of the dish. By cutting it into thick strings, the daikon cooks fast but remain slightly firm.

Note: Glossary of relevant Vietnamese cooking terms.

Tàu hũ = tofu

Xào = stir fry

Xả = lemongrass

Củ = root

Trắng = white

Sour Cream Cornbread Muffin Recipe Recipe

Today, I made cream of tomato soup and decided I would replicate the same flavors in cornbread muffins. I find that cornbread muffins are a great accompaniment when teamed up with a nice bowl of warm soup. I added chopped sun-dried tomatoes and sour cream to the batter as well as small chunks of Comté cheese. The cheese gave a fruity and salty note to the muffins.

I think the addition of sour cream makes for super moist cornbread muffins. Of course, they taste best piping hot right from the oven, but they still taste great the following day.
