Eggplant Tart Recipe

This eggplant tart is a refreshing and light dish. Eggplants are sliced, grilled and seasoned with pistachio pesto. The filling is a mixture of chopped eggplant with sautéed water chestnuts, which adds body to the tart.

Paired with a salad, this makes the perfect midday meal. It's pretty filling and will keep you going for the rest of the day. Enjoy!

This drink is made with mango purée, orange juice and a banana. The banana gives a smooth texture to the drink; cooked mung beans add protein and tie the flavors together.

I've read that eating breakfast is one of the keys to successfully losing weight. Since I've been waking up at the wee hours of the morning to work out for 45 minutes before starting the day, I want to stack the deck in my favor. A protein shake is the perfect choice for me because I'm not very big on breakfast (unless it's crêpes!).

Roasted Red Pepper Risotto (Ajvar Recipe)  Recipe

This risotto recipe gets its rich flavor and color from ajvar, a Serbian mix of puréed roasted bell peppers, eggplant, garlic and chiles. It’s very versatile, easy to make and stores very well.

I prepared the sauce a day in advance. You'll likely have some leftover ajvar after making the risotto, which can be used on toast or as filling in puff pastry appetizers.

Dal Paratha Recipe (Indian Flat Bread) Recipe

Paratha is a whole wheat Indian flat  bread. This version of the chapati bread is fairly easy to form, and is also relatively healthy since it's made with fine milled durum wheat flour (atta). Paratha are often "stuffed", and I flavored this version with cooked spiced masoor dal (orange dal).

For extra flavor, I brushed the bread with a thin layer of melted ghee (clarified butter), making the paratha an incredibly tasty, crispy side dish packed with protein.

Cold Cucumber and Arugula Soup Recipe Recipe

This weekend we had gorgeous weather. It was our first chance to enjoy the sun and eat outside, so I prepared a wonderful Sunday brunch for the family. The centerpiece of the meal was a chilled soup flavored with arugula and cucumber.

Arugula gives both an attractive color and a wonderful taste to the soup. If you’ve never had it, it tastes like a cross between mustard and hazelnut. I served the refreshing soup with little puff pastry appetizers. Easy, healthy and delicious.
