Cold Asparagus Soup with Grilled Watermelon Recipe

Quick reminder to enter the California Olive Ranch Giveaway. It takes less than a few seconds and you can win a bottle of EVOO! If you like California Olive Ranch, join their fan page on Facebook to get daily updates, special offers and deals.

I live for asparagus. I’ve grilled it, made risottos, meat dishes and more in the past. I’ve made soups before as well, but given that it’s still summer, I figured a cold asparagus soup would fit the bill.

I chose to cook with baby green asparagus spears because they're ultra tender and the color looks attractive. I kept the tips for a simple side dish of pan-fried fish fillets in butter and capers. The asparagus were grilled with olive oil so they were fragrant, then softened in vegetable broth until tender. I finished the soup by blending the asparagus with a little crème fraîche. The cold summer soup is refreshing, tasty, simple, yet very festive.

For a complete vegetarian presentation, I paired the soup with white balsamic grilled watermelon, which is in season. You could also add quail egg Niçoise salad or crab salad.

Cream of Tomato Soup Recipe (Soupe Tomate et Basilic) Recipe

Cream of tomato soup is a dish we make whenever I'm too lazy to go to the grocery store. It's flavorful, filling and easy to make. Best of all, the ingredients for the soup are usually available in our garden, pantry and refrigerator.

Because tomatoes are not fully grown in our garden yet, I used canned plum tomatoes and added heavy cream to give the soup a velvety texture. I also used a mirepoix of vegetables, which is a combination of coarsely chopped carrots, onions, leeks and celery. We usually eat tomato soup with a baguette, toast or a grilled cheese sandwich. Simple is beautiful!

Vietnamese Fried Bean Curd Soup (Hu Tieu Chay) Recipe

Lulu calls hủ tiếu chay (fried bean curd soup in Vietnamese) the ultimate Asian comfort food. The hearty broth is flavored with bold Asian ingredients, such as ginger, garlic and mushroom seasoning salt. There are a couple of uncommon elements; I used Fuji apples and rock sugar to add a touch of sweetness to the broth, and a Vietnamese variety of cured daikon radish (củ cải khô) that provides the signature flavor of hủ tiếu broth.

The real treat though, is the addition of fried tofu skin. It's used throughout vegetarian Vietnamese cuisine as a substitute for fried pork or chicken skin in mock meat dishes. The texture is crispy, yet chewy, and really shows off the versatility of tofu.

Korean Tofu Soup with Rice Cakes Recipe

Rice cakes are made from glutinous rice flour. We buy them at the Korean market. They're a great alternative to bánh phở or ordinary noodles. What I love most about this product is  that they're made with no additives or preservatives. They're a favorite at our house. The texture is very nice, and works well in a simple, clear vegetable broth. If you're looking for a healthy meal, this is not your average diet cabbage soup.

Vegetarian Lentil Soup Recipe

Vegetarian Lentil Soup

11.05.09 by Jackie

Sunny had an orthodontist appointment today and she got tighter elastic bands on her braces. The poor thing couldn't chew solid foods. I had to make her something that wouldn't cause any pain, and after looking through the pantry I decided to make her a bowl of hot lentil soup. She loves hot and spicy foods, so I added some leftover harissa "ice cubes" (see tips) from the freezer to the soup to give it a kick and to complement the earthy flavors of the lentils.

You'll enjoy this soup even if you haven't had recent dental work done. It's a great cure for the cool weather we've been having as well.
