Vietnamese Asparagus Crab Soup (Sup Mang Cua Recipe) Recipe

Súp măng tây nấu cua (white asparagus crab soup) was always a festive dish when I was a child. We would have it whenever my parents had non-Vietnamese friends to our house for dinner. I would help with cracking the crab and gathering the crab meat. Corn starch, used as a thickening agent, gives the velvety, thick broth gives the dish a unique texture. While white asparagus doesn't provide a lot of color contrast to the crab, it does complement the flavor quite well.

The authentic version of this soup requires shark fin, but given how expensive it is, crab alone is used instead. The dish still has a luxurious quality, and as such, white asparagus crab soup often appears on the menu at Vietnamese weddings. Now you don't have to crash a Vietnamese wedding to try this dish; make it the next time you throw a dinner party, and I guarantee it will be the highlight of the meal.

Orzo pasta salad is a very quick and easy dish to prepare. You can vary the ingredients in the sauce, but the basics are the same: you need the orzo pasta, some vegetables and a sauce. I made a roasted red bell pepper paste, added some green beans for color, lentils for protein and finished the dish with enoki mushrooms and cashew nuts for texture.

If you're looking for a quick and easy recipe for a picnic, this dish is an excellent choice. It's a light dish that pairs well with almost any kind of protein (hamburgers, fish, etc.). It's also very flexible; as spring turns into summer, you can incorporate many different seasonal vegetables into the recipe. Our extended family has a lot of picnics and potlucks this time of year, and I often prepare some variation of an orzo pasta salad. It's great for both the vegetarians and non-vegetarians in our house.

Trenne Pasta with Napa Cabbage and Chorizo (Pasta Con Verza Recipe) Recipe

Chorizo, cabbage and sage may not be an obvious combination, but they work incredibly well together. The vegetarian chorizo, or "soyrizo", adds a ton of spice and the Vitamin A-packed Napa cabbage imparts a subtle sweetness to any meal.

I just made a batch of vegetarian chorizo today, which is what inspired me to make this dish. There are many good reasons for making your own, but the main reason is that it's much healthier (no cholesterol) than the meat version, without sacrificing flavor.

I paired the chorizo and cabbage mixture with triangle-shaped trenne pasta because it's much more fun for children than "boring" penne pasta. It's also a great way to get fussy kids to eat their cabbage. For all those people out there who think that healthy has to be tasteless, you need to try this dish. It's bursting with flavor without packing on the calories.

Sweet Lassi (Indian Yogurt Drink) Recipe

Lassi is an Indian yogurt drink. I often make it at home, but I've never quite been able to recreate the subtle tanginess of the drink. That is, until now. On our last trip to the local Indian restaurant, I asked the waitress about their preparation techniques, and she told me that they always add Bulgarian cultured buttermilk when making plain lassi. After that lunch, I stopped at the local Middle Eastern store, picked up a carton of buttermilk, and adjusted my recipe to her specifications. I've been making it this way ever since.

I use traditional Indian flavorings in my lassi, specifically elaichi ("cardamom" in Urdu) and rose water. My mother-in-law isn't a huge fan of rose flavoring, so I only added ¼ teaspoon of rose extract. You can add as much or as little as you'd like.

Grapefruit Salad (Pomelo Salad)

It's been raining so much this season in the Bay Area (California) that our garden has produced a lot of citrus. Our pomelo tree has been particularly prolific. I've been pleasantly surprised by their sweetness, and I knew I was on to something delicious.

Pomelos have a subtle sweetness that is greatly enhanced by the addition of certain spices. To make this salad, I gathered the pomelo segments in a large bowl and covered them with ginger, coriander, agave nectar, sesame oil and red Thai bird chiles. It's a refreshing way to begin or end a meal.
