Red Rice Drink Recipe

Since I gave birth to my daughter, I've experienced lingering fatigue and low energy. This recipe was given to me by my friend Mai's mom. She said red rice has been described for centuries as a medicinal agent. She insisted it would lower my blood glucose, which could be why I'm not feeling so well. You may already know this by now: I'm a sucker for old wives' tales, and when anyone who tells me a certain food enhances your health I rush into the kitchen and make it. I don't know if I should be admitting that so close to April Fool's Day, because I fear that I'll be getting strange suggestions from readers over the next couple of days!

I've been drinking this ground red rice (bột gạo lức in Vietnamese)  drink  for a week now. The results aren't bad, though it's quite possible that I'm susceptible to the placebo effect. Regardless, the preparation isn't very complicated and it tastes good!

Chao Vit Recipe (Vietnamese Duck Rice Soup) Recipe

The weather in the Bay Area wasn't all that great over the weekend. It's been rainy and very windy. Making rice soup seemed the appropriate recipe for this type of climate. If you’ve never had it, rice soup is a one-dish meal that is both filling and satisfying. You can add many different ingredients to your basic rice soup, but I made this particular version with my favorite meat: duck. It's called cháo vịt in Vietnamese. I find duck meat to be a lot more flavorful than regular chicken.

Traditionally, it would be served with gơi vịt (Vietnamese duck salad using the remaining meat from the duck stock) and chopped bánh giò cháo quảy, which are Vietnamese savory beignets. I skipped the fried food to keep the meal healthy; I even took the time to strain and remove the extra fat floating at the top of the duck stock!

After giving birth, my doctor reminded me on multiple occasions to get enough calcium in my diet to support my own bone health. Of course, drinking milk and eating dairy products such as cheese and yogurt goes without saying. Another calcium supplement I like every now and then is sardines. They are tasty and very nutritious. I've always loved eating the bones, which are an excellent source of calcium. Unlike swordfish or King mackerel, sardines have a much lower mercury content. 

In this recipe I served the sardines on a bed of Parmesan crisps and flavored them with sauce verte. The green sauce is a very pleasant complement to the fish. It's made of green olives, capers, cornichons (tiny French gherkin pickles), lemon, garlic, Dijon mustard and extra-virgin olive oil. Next time you're looking for a snack packed with omega-3's and lean protein, you might consider making yourself this sardine treat.

Vegetarian Char Siu Recipe (Tofu Xa Xiu) Recipe

If you've been to an Asian market, you've probably noticed the long pieces of Chinese-style barbecue meat glistening with red sauce on hangers. The red sauce is char siu sauce (in Vietnamese, it's called xá xíu). Since my husband Lulu is a vegetarian, I made a tofu version and coated the fried tofu with the sweet sauce. It's made with honey (but I used date syrup for a darker color), hoisin sauce, reduced soy sauce, dry sherry (optional), fresh ginger, five spice powder and sesame oil. I added a little red food coloring to reach the typical char siu color but really, it's up to you. To finish the dish I sautéed the tofu with shiitake mushrooms and red and green onions.

I didn't miss eating meat at all, but of course, you could use the sauce on a pork tenderloin and generously baste the meat with the eye-catching sauce, if you prefer.

Peanut Butter Banana Milk Drink Recipe Recipe

This recipe is for the ones who love the good old combination of peanut butter and banana, but with fewer calories. As I've said in the past, I always try to find ways to ensure that my husband Lulu, who is a vegetarian, has enough nutrition in his diet. He's also been exercising regularly lately, so I figured a healthy treat was in order.

I made banana milk that is vegan (Lulu's lactose intolerant too!). The drink is a blend of bananas, soy milk, peanut butter, cinnamon, whey protein and vanilla extract. It's a delicious way to start the day with healthy servings of potassium and protein, which is great for a vegetarian diet. Best of all, Lulu loves it! And if you like this drink, I'll post more whey protein-enhanced beverages soon.
