Here's a recipe for an inexpensive, super easy and delicious snack. My husband Lulu and I usually love munching on snacks late in the evening and kale chips are a great way to do so guilt-free.

Kale chips are nutritious and low in calories with fewer than 50 calories per serving. I flavored the chips with Indian spices and Meyer lemon zest. You can find a similar recipe in my latest book, Haute Potato, made with waffle potato chips instead.

Cabbage Gratin Recipe

The weather has been so cold and windy in the Bay Area that this gratin dish received a warm welcome from the family at dinnertime. Little cottage cheese filled cabbage dumplings are cooked in a hearty mache sauce, then finished with a bit of cheese. Cabbage gratin, or "gratin de chou" in French, has comfort food written all over it.  

I tried to make this gratin as healthy as possible. This casserole dish is packed with greens and is high in protein, since 14 ounces of cottage cheese has at least 50 grams of protein (compared to a 6-ounce steak with 42 grams). Not that you should consider eating the whole thing by yourself!

Cauliflower Tofu Stir Fry Recipe Recipe

Our favorite tofu company, Vinh Khang Tofu, has just opened a new location in San Jose, close to King road in Sunset plaza. We visited the shop and stocked up on loads of freshly pressed tofu for the week.

I used some of it to make this crispy yet still fluffy tofu with cauliflower. I've prepared tofu so many times over the years that I bet I could prepare a tofu stir fry dish with my eyes closed. I must admit though, that I've never tried it with cauliflower, and I have to say that I really like how it turned out. The cauliflower softened nicely and provided a nice contrast to the crispiness of the tofu. Definitely worth a try!

Eggplant Marinara Recipe

This is a healthier version of eggplant Parmesan, but just as tasty. I used a limited amount of cheese in this dish, and filled grilled eggplant with white beans. The white beans have a soft texture and add a bunch of protein to the dish, making it a viable main course option for vegetarians.

I still had a leftover jar of marinara sauce from last summer and the sauce tasted amazingly good. Everyone loved this dish and the best part is that no one felt guilty having the decadent dessert I made afterwards!

Vegetarian Chili Verde Recipe

Comfort food is usually synonymous with a high calorie count, but that doesn't always have to be the case. I've served vegetarian bean chili several times in the past for my husband Lulu and he loves this dish. Our family jokingly calls it "chili non carne." Even an avowed carnivore like me must admit it's pretty satisfying.

For a little change, instead of using regular red tomatoes, I prepared the chili with fresh tomatillos (also known as husk tomatoes).  I mixed tomatillos with Anaheim and Serrano chiles, green bell peppers, lime, garlic, store-bought soy chorizo and fresh pineapple. This recipe couldn't be easier!
