 Vegetarian Homemade Black Turtle Bean Patties Recipe

This is one of our family's staple vegetarian dishes. It's rich in nutrients, healthy and very tasty. If, like me, you're not a vegetarian, you won't miss meat with this veggie pattie recipe. The texture is very similar to a ground turkey burger and the addition of garlic, onion, red chili flakes and sourdough croutons brings plenty of flavor to the dish. 

I like using black turtle beans. You can find them in most supermarkets in the dried bean aisle and sometimes in a canned version in Indian markets. You can use most black beans interchangeably, even though turtle beans are a little smaller. Just make sure you don't use black soy beans, which have a totally different consistency and taste.

Goat Cheese Arugula Recipe

There is something utterly delightful about this goat cheese arugula salad. The combination in the first place is  exquisite but I wanted to kick it up a notch by breading the medallions of goat cheese with crumbs of freshly baked brioche. I also added a carpaccio of mango and radish to add color to the salad.

The technique for obtaining perfectly sliced mango is nothing simpler than using thread. In my childhood, we would often use this method to slice meat pate for a clean cut, especially during the holidays. I often find myself using tools that don't necessarily belong in the kitchen, but are perfect for the job at hand.

Muhammara Recipe (Walnut and Pomegranate Dip) Recipe

I had never heard of or tasted muhammara before until I met the folks at California Lavash. Every time I met with their team, I would hear how exquisite it tasted. In all seriousness, when you hear about a combination of walnuts, charred red bell peppers, fresh pomegranate seeds, lemon juice, garlic, mint, salt and pepper, it’s difficult to imagine how it couldn’t taste amazing!

To thicken the texture of the dip, I added bread and extra virgin olive oil, and balanced the flavors with dates, a hint of ground cumin and red chili powder. You could use it as a dip served with toasted pita bread or cucumber and celery sticks but in my case, I used it as a spread for a roasted lamb sandwich. It was delicious!

Chestnut Tofu Stir-Fry Recipe

It's Meatless Monday and we're going to be celebrating the Asian Lunar New Year in about 2 weeks. It's the perfect occasion to show you our family's favorite: tofu stir fry. For this version, I sauteed shiitake mushrooms, broccoli and roasted chestnuts. The chestnuts have a mealy texture that's very satisfying and filling, which is great when you're on a vegetarian diet. I'll be taking the proverbial plunge from the day before the New Year through the day after (there is a tradition of abstaining from meat during this period for the New Year).

I just came home from West Hollywood after promoting my second cookbook Banh Mi during the Golden Globes presentation. I also shared my pandan cookies, and guess what? I'm not big on bragging but everyone adored my signature cookies and the Banh Mi cookbook! I've shared and will share a few photos of the event on my social media channels.

Festive Shrimp Salad Recipe

Our lovely neighbor Tom is so sweet; he always brings us lemons from his brother's garden. I've made countless lemon desserts with them in the past, so this time I thought I could use them in a savory dish. 

I prepared a lemon dressing that I used both as marinade for jumbo shrimp and as vinaigrette for celery, spinach, cucumber, carrot and French green bean salad

If you want to turn a plain Jane seafood salad into a gorgeous salad course, I recommend using a mini dessert bowl and "hanging" the shrimp off the rim of the glass and placing the salad at the bottom of each bowl.
