Marinated Rib-Eye Steak Recipe

Little Aria is not very picky when it comes to eating meat. As long as it's tender, boneless and juicy, she's  always up for joining me and sharing the meal. Today I prepared thinly-sliced marinated rib-eye steaks and simply cook them on the grill. We enjoyed them with brown rice, bean sprout pickles and kimchi but they would also make a wonderful filling for a sandwich.

First I prepared a basic marinade made from chopped onion, garlic powder, green onions, honey, a bit of cooking wine, Worcestershire sauce and freshly grated green papaya. You can use the same marinade for other types of meat; it will be incredibly flavorful and  juicy.

7 Delicious Recipes using Lemon Grass Recipe

Lemongrass (xả) is very common in Vietnamese cuisine. It is considered a mild diuretic, tonic and stimulant. Lemongrass is typically sold in packs of 5 stalks and can be a bit pricey.

Many years ago, we planted and grew it at home.  It was doing quite well, and since it is a perennial, we kept getting fresh stalks. Unfortunately, our dog uprooted and destroyed everything. So, according to my aunt Danielle, we didn't need to buy the plants again. All we need is to buy lemongrass from the market and water root the plants.

I peeled the bottom skin layer off the stalks, placed them in a vase filled with water and exposed it under the sun for 15 days until roots were visible. We just planted them in a pot and let nature do its magic. We're keeping our fingers crossed.

In the meantime, I'm using the one from the market. I gathered several lemongrass dishes that are a hit in our home. Hope you find inspiration in cooking with this exotic ingredient.

Vegan Coconut Soup Recipe

I usually pair coconut soup with seafood.  To ensure that the rest of the family could share a similar meal with me, I made scallop-lookalike sweet potato out of a Vietnamese root vegetable called khoai tu. It resembles sugar cane but once cooked, it's starchy with a subtle sweetness. I cut it into the dimension of sea scallops and pan-fried them. Once the fragrant coconut broth is ready, you just need to add the wonderful looking vegetarian "scallops".

Khoai từ has been available at the Asian market this season but it's a little pricey. I think this would make a fabulous dish for you to serve if you celebrate the Vietnamese New Year. I'll try to have a vegetarian diet the days before and after New Year's Day but since it isn't time for the festivities just yet, I indulged in the real thing with fresh, large and sumptuous sea scallops.

Ghost Halloween Lemongrass and Ginger Beef Noodles Recipe

Boo! I have to admit I'm a little ashamed of today's Halloween-inspired meal. I prepared Vietnamese beef noodles (bún thịt bò xào xả gừng in Vietnamese) today and I had in mind that I'd be able to have fun with the rice noodles and create scary mummies. In the end, it looked neither like a mummy nor a ghost. As we were eating dinner, little Lala asked for 2 whole black peppercorns and found a solution to our mummy situation. Et voila! What do you think?

Cold beef noodle salads are very common in Vietnam and they are definitely a staple in my home. Sauteed beef in lemongrass is served with thick rice noodles and an abundance of Vietnamese greens. It might not be the creepiest meal for the Halloween season, but it sure is delicious.
