Ratatouille Stuffed Beggar's Purse Recipe Recipe

I’ve made beggar's purses using crêpes as wraps in the past. They look incredibly elegant, but are not difficult at all to make. You could also simply fill the crêpes and fold them in half but I thought tying the purses with parsley stems was a nicer touch for Valentine’s Day.

This time, I filled them with ratatouille and Brie cheese. To the traditional ratatouille ingredients, I added sweet potatoes for a little firmer consistency. If you’re not serving this to vegetarians as I am, the beggar’s purse would make a great companion to steamed fish or a stuffed salmon filet.

Nutella Crepes with Kiwi

Chocolate and kiwi are two of my favorite flavors. When combined, they enhance one another, creating subtleties that cannot be found in either ingredient on its own. In the past I've used them in cakes and other desserts, and today I thought it would be fun to use the combo as a crepe filling.

The chocolate part of the equation is satisfied by the French mainstay Nutella. Nutella, in case you don't know, is a chocolate hazelnut spread. I wasn't sure at first how the hazelnuts would play with kiwi, but after tasting the finished product, I can't imagine it any other way!

Eggless Dessert: French Crepe Recipe Recipe

This eggless crepe recipe requires less liquid than regular crepe batter, along with a bit of baking powder. You could serve them as is, or you could add your favorite filling. This time around I smothered the warm crêpe with butter, added a layer of apricot preserves, topped it with sweetened whipped cream and finished with fresh fruits.

Most French desserts contain eggs, but as I’ve mentioned in the past, one of my sisters-in-law is allergic to them. I’m always trying to find ways to make egg-free alternatives to please her sweet tooth. After many attempts, I’ve found that crêpes translate incredibly well without eggs, perhaps better than any other treat. Being able to watch her enjoying the dessert with a wide smile across her face makes it all worth it!

Galette Complete (Savory Crepe Recipe) Recipe

Galettes are the savory version of a crêpe. Une galette complète, also known as crêpe jambon-œuf-fromage is a version filled with ham, eggs and cheese. I decided to have a little fun and made my version with smoked beef sausage, emmental cheese and sunny side up quail eggs.

We make crêpes at least once a month. It's my way of having a lazy day. The girls make the crepe batter themselves, following the instructions to a "t". Everyone gets involved with the measuring of the ingredients and the mixing, even the little ones. If you have kids, this meal is the perfect way to get them interesting in cooking, and everyone can reap the benefits.

Aumoniere Recipe (Beggar's Purse) Recipe

Aumonière (also known as beggar's purse) is the name of an appetizer made of a filled crêpe bound in such a way that it resembles a drawstring purse. The tie is usually made of chives. I made the filling with a combination of roasted orange bell pepper, kumquat jelly (I'll post the recipe soon), sweet marjoram, lemon thyme, onion chives, non-pareil capers, cream cheese, blue cheese, lemon and pistachio oil.

I tested out the recipe today in preparation for Mother's Day next week. The dish is ultra simple to make and can easily be assembled by a child. It’s a wonderful way to get your kids involved in the kitchen and let them prepare a special meal that they will enjoy as well.
