Coconut Curry Tofu Recipe
I haven't cooked any tofu dishes for my husband Lulu in a while and I thought it would be good to vary his diet. So I prepared tofu with fresh wood ear mushrooms, sweet potatoes, carrots and red bell peppers that I stir-fried in coconut, galangal and turmeric curry sauce.
I topped the tofu dish with a few roasted peanuts to create a contrast in texture and make the dish more fun.

Kiem Recipe (Vietnamese Vegetarian Pumpkin Soup)
This year, the Asian New Year celebration (called Tết in Vietnamese) will happen during the first week of February, according to the Lunar calendar. I've mentioned in the past that, traditionally, you're required to eat vegetarian food (ăn chay) on the last day of the previous year and the first day of New Year.
Today, I'm sharing a vegan dish called kiểm that's a staple during the celebration. The dish is a sweet, savory soup made of pumpkin, bananas, coconut milk, mung beans, lotus seeds, wood ear mushrooms, sweet potatoes, ginger, tofu and raw peanuts. This is not a very common dish and it's only made for the celebration. If you know its origin, please let me know in the feedback section.

Banh Xeo Chay Recipe
Papa, Maman and I went to China Town in the 13th arrondissement of Paris and bought a lot of Asian ingredients. When we got home, I whipped up Vietnamese crêpes called bánh xèo. I made them "chay" ("vegetarian" in Vietnamese), so my husband Lulu and all of us could share the same meal. The filling consisted of carrots, beans, tofu and fried jicama.
Bánh xèo, served hot, are absolutely delicious. They're crispy on the outside and filled with lots of flavorful goodness.
