Strawberry Banana Smoothie Recipe Recipe

A strawberry banana smoothie is perfect when you need breakfast on the go. I whip up the drink with frozen strawberries and a banana whenever Lulu is running late. Strawberries aren't quite in season yet, so frozen is your best bet. When you can get them fresh, this drink is even more delicious.

Besides being a vegetarian, Lulu is also lactose-intolerant, so it's a challenge to make him calcium-rich food. I used almond milk and yogurt to deliver calcium without adding too much lactose. I also added a scoop of whey protein to fortify the drink with a little protein. I placed the smoothie in a cup that I sealed with a lid and added a straw.

Lulu left for work with a strawberry banana smoothie in his hand and a kiss on his cheek. I think that's a pretty good way to start the day!

Meyer Lemon Sorbet Recipe Recipe

Meyer Lemon Sorbet Recipe

04.23.10 by Jackie

Sorbet is a very easy sweet treat to make. All you need is the right equipment to create the frozen dessert. I gathered the last crop of Meyer lemons from the garden and thought it would be nice to make a gourmet sorbet, adding ginger. Because it doesn't contain any fat or custard, sorbet takes a lot longer to churn and it tends to melt very easily. Often alcohol is added to the mix because it lowers the freezing point and keeps the product softer. I wanted to make the dessert kid-friendly, so after experimenting with stabilizers in my new eggless ranch dressing recipe, I decided to use the same combination of xanthan gum and lecithin in the sorbet. The result is an incredibly velvety texture that coats your tongue in a way that ice by itself just can't.

To add a contrast of color and texture to the sorbet, I paired it with blueberries sweetened with agave nectar. This is a tasty, yet healthy way to end any meal. Enjoy!

Virgin Pina Colada Recipe

Virgin Pina Colada

03.28.10 by Jackie

Piña colada is a sweet cocktail made with coconut and pineapple juice. I made it kid-friendly, but the authentic version requires a few shots of rum.

Les beaux jours sont de retour! "Sunny days are back" and I thought it would be a well-deserved drink to bring to my husband after a long day at work. When Lulu came home, I told him to lie down in a long chair outside on the deck and wait for me. I whipped up the cocktail for him (and for the girls as well) and brought a tray full of the piña colada drinks. His reaction was: "Oh, you read my mind, sweetie. This drink reminds me so much of our anniversary trip to Cancun!"

Sweet Lassi (Indian Yogurt Drink) Recipe

Lassi is an Indian yogurt drink. I often make it at home, but I've never quite been able to recreate the subtle tanginess of the drink. That is, until now. On our last trip to the local Indian restaurant, I asked the waitress about their preparation techniques, and she told me that they always add Bulgarian cultured buttermilk when making plain lassi. After that lunch, I stopped at the local Middle Eastern store, picked up a carton of buttermilk, and adjusted my recipe to her specifications. I've been making it this way ever since.

I use traditional Indian flavorings in my lassi, specifically elaichi ("cardamom" in Urdu) and rose water. My mother-in-law isn't a huge fan of rose flavoring, so I only added ¼ teaspoon of rose extract. You can add as much or as little as you'd like.

Meyer Lemon Curd Recipe Recipe

Meyer Lemon Curd Recipe

02.28.10 by Jackie

Lemon curd (crème au citron in French) is thickened custard made from lemon juice and zest, sugar, butter and egg yolks. I used the fruits from our Meyer lemon tree in the garden and added ginger to conceal the egg yolk flavor.

It's one of my favorite spreads for tea time and breakfast. I also use lemon curd as a filling in crêpes and croissant but you could use it in Meyer lemon bars, cheesecake or a lemon meringue pie. Lemon curd is easy to make, incredibly versatile and delicious. It's also a great way to introduce kids to cooking. I've made it several times with the girls, and they always have a lot of fun. If you're looking to get your kids involved in the kitchen, this lemon curd recipe is a great place to start.
