Poha Chudva Recipe

I realize I haven't posted any Indian dishes for a while. Last weekend, Daddy, my father-in-law, suggested we prepare poha, which is a flattened rice dish. Poha is a great breakfast item and is also delightful as a snack. I've prepared similar dishes such as chudva in the past.

Thick, flattened rice grains are rehydrated and cooked with turmeric and coconut. I kept the recipe fairly simple , flavoring the rice with only mustard seeds, cumin seeds, dried red chiles, curry leaves, cilantro and a generous amount of lime juice. 

You could fancy this up and make it more filling with frozen green peas, diced potatoes or cashew nuts. I haven't seen this rice dish in any Indian restaurant, so if you want a fairly unique culinary trip to India, give this simple and easy dish a try!

Poha Chudva Recipe (Indian Puffed Rice Trail Mix) Recipe

I was flipping through past recipes on PhamFatale and realized that while I published the picture, I didn’t share the recipe for poha chudva. The difference in this recipe from other chudva recipes is the addition of rich and creamy Brazil nuts. I deep-fried them with other nuts and mixed them with homemade-puffed rice called "poha". It's a great fusion South American and Indian rice trail mix flavored with many Indian spices.

I didn’t make the snack too spicy so the little ones could enjoy it too. We made several batches and packed them in cute Chinese takeout boxes for sharing.

Cauliflower Fritters (Gobi Pakora) Recipe

I still had a lot of cauliflower left after making a healthy chou fleur vinaigrette, so I finished the remaining head of cauliflower in a slightly less healthy way. These Indian cauliflower  fritters take no time to prepare and no resting time is required.  The batter is made from besan (garbanzo flour) mixed with lots of Indian spices. The rest really comes down to what vegetables are available in the refrigerator. 

Pakora are my go-to snack food whenever we have last minute guests. Fried food is always a crowd pleaser in my house!

Tandoori Mattar Paneer Recipe

After editing the grilled tandoori shrimp recipe yesterday, I couldn't help but feel the urge to make a similar dish today for dinner. Given that I have so many vegetarians in the house, I opted for a mattar paneer dish (peas and cheese) flavored with tandoori paste.

In the morning, I made fresh homemade  paneer cheese (it's ultra easy). Later, I marinated the paneer cubes in tandoori paste, which dressed them in a beautiful crimson red color. The rest is the usual paneer masala recipe that my husband Lulu loves so much. I used fresh green peas from a local Indian market for color, texture and nutrition.

This recipe isn't strictly authentic since I combined two dishes I learned from my husband's late grandmother Baji. But your taste buds won't complain, I promise.

Toor Dal with Drumstick Vegetables (Indian Lentil Recipe) Recipe

If you're not familiar with drumsticks, they are long, thin, green pods commonly used in Indian cuisine. They are often used in sambar soup but they can also be a substitute for spinach or green beans in dal dishes.

I prepared toor dal, which is the most common lentil paired with drumsticks, although I've seen this dish prepared with mung beans and chana dal (garbanzo) as well. To guarantee optimum tenderness, I choose immature drumsticks at the market; otherwise they become a little too fibrous. When the lentils are soft and gravy-like, drumsticks are added. The drumsticks are chewed until all the artichoke-like texture is eaten, then the outer skin is discarded. If you can get your hands on some, give them a try. They're definitely out of the ordinary.
