Cauliflower Salad with Roasted Bell Pepper Dressing Recipe

Here's a recipe for a delicious, inexpensive and healthy dish. I prepared a simple cauliflower salad with two entire heads of cauliflower. The wow factor resides in its delicious salad dressing; I made it with roasted bell pepper, which gave a warm and inviting tone to the dish. Additionally, I used pine nuts for extra creaminess and a more complete protein source.

Roasted Cauliflower Pumpkin Soup Recipe Recipe

I hope it's not going to be too cold next Thursday for our family gathering. But I'm keeping this soup recipe as a “maybe” in case the temperature drops too much and we crave something soothing and warm. 

To ensure the soup keeps up the Thanksgiving theme, I used a combination of fall-friendly veggies like pumpkin and roasted cauliflower. I also added duck prosciutto for texture and thyme-infused whipped cream for extra creaminess.

Cauliflower Asparagus Manicotti Pasta Recipe Recipe

I’ve been feeling kind of miserable since getting home from our trip to Paris. Not only have I caught a nasty cough, but I'm still heavily jet-lagged.  What’s worse, I haven't visited the gym in almost a month and I have a mountain of tasks I need to complete very soon before I become totally overwhelmed. As you may have guessed, my cure for most problems is cooking, and today, I made one of my favorite comfort foods, something creamy, cheesy and filled with vegetables: an asparagus and cauliflower manicotti pasta.

To reduce the amount of cheese, calories and guilt in the béchamel sauce, I blended cauliflower into the white sauce. Once softened, the cauliflower became very creamy and gave extra body to the dish.

Cauliflower Cold Soup with Grilled Shrimp Recipe

Cold cauliflower soup is a refreshing first course during the hot weather, especially with the heatwave that we've been experiencing these past few days. I blended cauliflower, sweet round rice, ginger garlic paste and crème fraîche with a few spices such as cumin, coriander and turmeric. I served it in bowls (you could also use chilled glasses) topped with grilled shrimp covered with mango and sungold cherry tomatoes.

My husband Lulu is a vegetarian so I simply omitted the shrimp and prepared a separate batch using flavorful homemade vegetable stock. That way Lulu and I were able to share the meal together.

Veal Scallopini with Curried Cauliflower Recipe

Baby Aria now has eight teeth and two more coming in. And boy, does she like to use them! She's not fussy at all when it comes to food. Aria and I usually eat the same meal. This evening, I prepared an "escalope de veau au chou fleur", which translates from French to "veal scallopini with cauliflower".

First, I browned slices of veal, then cooked a combination of cauliflower, Granny Smith apples and Sweet Million tomatoes as a side. I tied the dish together with gravy, and for added crunch, I added almond slivers at the last minute.

I have to admit that Aria’s favorite part of the meal was the cauliflower, and she wouldn’t have touched the veal if I hadn’t made her eat it. Lulu often reminds me that he never really liked the taste of meat when he was a child and by the time he was a teenager he happily gave up the idea of ever eating it again. I believe that if you train children to eat everything at a young age, they'll eat anything as adults. What do you think? Should I influence Aria to become a meat eater?
