Vietnamese Vegetables with Ginger (Rau Muong Xao Gung) Recipe

Vietnamese cuisine boasts many dishes that highlight fresh ingredients in a healthy manner. Rau muống xào với gừng (Vietnamese pea tendrils sautéed in ginger) is an excellent example of this.  The dish is incredibly simple; the pea tendrils are blanched and then flavored with ginger and a little turmeric for color. I made it recently for my uncle who was visiting us and is a practicing Buddhist, which is why the recipe does not call for onions, shallots or garlic. Don’t worry though; the dish is only light on calories, not flavor.

As a child, our typical Vietnamese family meals were composed of individual bowls of rice, meat, seafood or tofu, a bowl of canh (a clear broth soup), a vegetable side dish and a dipping sauce. I always looked forward to a bowl of rau muống, served with a soy sauce and ginger dipping sauce called mắm gừng. If you have trouble getting your family to eat their greens, give this dish a try. It worked on me!

Kale with Homemade Pickled Ginger Recipe

Kale with pickled ginger is one of the healthiest and tastiest ways to get a meal packed with iron. I made my own pickled ginger and an Asian-inspired salad dressing with lemongrass, miso and sesame oil. The result is the perfect condiment for boiled kale.

The reason I've been trying to make iron-rich meals lately is that my sister-in-law, Sunny, was diagnosed with iron deficiency. It's a fairly common problem that primarily affects women. She had trouble with the iron pills, so it was suggested to us that we make her foods that are rich in iron. Because of this, I've been trying to cook more with kale.

Salmon Teriyaki Recipe

Salmon Teriyaki

Fish can seem challenging to make at home but, pavé de saumon caramélisé (salmon teriyaki) is an ultra-easy recipe. All you need to do is ask your fishmonger to prep the salmon in advance for you. I made a teriyaki-inspired glaze to go with the salmon and served it with rice.

If you've been following my culinary adventures since the beginning of Pham Fatale, you may recall that I posted one of Lulu's favorite tofu recipes, called "sesame tofu caramelized with agave nectar and wasabi". This vegetarian recipe was inspired by this salmon dish. I hadn't made it in a long. tine, but my mother-in-law brought home some beautiful salmon fillets, so I told her I'd be in charge and surprise her. She loved it even though she said I should have tripled the amount of wasabi paste (she loves spicy food). You're welcome to follow her advice if you prefer it really spicy, but I'm a wimp, so I'll stick to just a half teaspoon...

Kale with Caramelized Kumquats

This side dish couldn't be easier to make. Onions and kumquats are slowly caramelized with ginger and agave nectar and added to slightly sautéed kale. What could be better than a dish that's delicious, healthy and simple?

I was inspired to make this dish by a reader. Chef Doreen T. Ross is a culinary artist and consultant from North Carolina. Doreen sent me a recipe suggestion using kumquats (I've asked for recipes using this ingredient) with wilted kale. I've adapted Doreen's recipe and added an Asian twist to it. Sunny and Lulu were my guinea pigs, and they loved it. Merci Doreen!

As I've said several times, I'm just a home-cook who is passionate about food and has had no professional training. Creating this site has really broadened my culinary horizons. Banana Flower Salad (Goi Bap Chuoi Chay) Recipe

In case you were wondering, banana flowers really are the flowers of the banana plant. They are also known as banana blossoms or banana hearts. The taste is reminiscent of artichoke hearts. They are consumed throughout Southeast Asia and also in India as well. In fact, I bought the banana flowers I used in this dish from an Indian market.

Gỏi bắp chuối chay literally means vegetarian banana flower salad in Vietnamese. It's a popular dish in the Buddhist community where many recipes, due to dietary restrictions requiring vegetarianism, are made to simulate meat. Banana flower salad is thought to imitate the flavor of gỏi gà, Vietnamese chicken salad. Other recipes use ingredients such as tofu skin or fried soy gluten that are chewy and resemble the stringy texture of meat.

This is a dish that is not only exotic but tasty as well. You might not make it every day, but it's definitely something you should try.
