Bun Rieu Chay Recipe (Vietnamese Vegetarian Vermicelli Rice Noodle Soup) Recipe

Bún riêu cua is traditionally a vermicelli rice noodle soup made with tomato broth, meat, crab and shrimp paste. I'm not a very big fan of the meat flavors with shrimp paste so I usually make it meatless, using a paste of soybeans (and add the crab separately). The visuals and texture resemble the crab patties and the broth has the same fragrance from the sweet tomatoes.

The soup is typical Vietnamese comfort food. It's paired with the usual Vietnamese aromatic herbs and topped with other vegetables and fried tofu for a complete meal.

Braised Tofu with Hoisin Sauce Recipe

Braised Tofu with Hoisin Sauce

01.27.10 by Jackie

Braising is one of the best cooking methods to increase the flavor of tofu. In this particular dish, I braised the tofu in a hoisin sauce-based mixture for its caramel color and subtle sweetness. To this, I added several vegetables such as wood ear mushrooms, button mushrooms, carrots and Japanese eggplants.

If you've been following my culinary adventures, you know I married a vegetarian. I'm not saying it as though it's a flaw, but I have to admit that when we first got married, I was a little nervous about what I was going to feed my sweetie. I really didn't have any familiarity with vegetarian cuisine. I love Lulu so much that I was determined to learn how to prepare flavorful vegetarian meals. Since then, I've tried boiling tofu, pan-searing it, grilling it, braising it and deep-frying it. I think I've gone through every possibility, but If you have any other methods you like for cooking tofu, please drop me a message.

Vietnamese Meatloaf (Mam Chung Thit) Recipe

Mắm chưng thịt is a staple of Vietnamese cuisine. It's a blend of pork or chicken, crab meat, salted fish fillet in brine, bean thread noodles, mushrooms and eggs.

For this recipe, I used a mix of chicken breast and thighs. The flavor is reminiscent of the filling of a meat egg roll combined with the strong flavor of salted fish fillet in nước mắm (brine). The most common fish used for making steam fish cakes is snakehead fish, though mackerel or catfish can be used as well.

Vietnamese Tamarind Sweet Crab (Cua Rang Me) Recipe

Vietnamese-style tamarind crab (cua rang me in Vietnamese) is an incredibly simple, yet absolutely mouth-watering dish. The real key to making this dish successfully is to have the freshest crab you can get. The roughly cracked pieces of crab are stir fried in a sweet and sour tamarind sauce. The sauce is made of tamarind, chili, Thai basil and garlic. The Thai basil imparts an intense fragrance to the sauce, and by extension, to the crab.

We eat this dish family style. No pretense here. Just get a large platter, fill it with the tamarind crab and put it in the middle of your dinner table. We don't have enough meat eaters in my house, so I always call over a couple of family members or friends to share in the bounty. Roll up your sleeves, and dig in!

Vietnamese Deep Fried Banana Fritters with Ginger Coconut Mascarpone Sauce Recipe

Banana fritters, or chuối chiên in Vietnamese, can be found on street corners throughout Saigon. Aunt Elise, who is visiting us from Vietnam, has been teaching me many Vietnamese recipes, and today she showed me how to make these tasty treats. It's been a lot of fun learning about my culture and of course, the food, from someone who spent her whole life in Saigon.

The batter that the bananas are coated in is very similar to tempura batter. To make it a touch sweeter, we added some banana and banana extract. The fritters are usually eaten as is, but I wanted to make them a little fancier. I prepared a decadent mascarpone dip flavored with ginger, Vietnamese mint and coconut. The dip, though non-traditional, provides a nice contrast to the texture of the fritters. It's a taste of Vietnam that you won't be able to resist.
