Bruleed Banana Cheese Gingersnap Treats (Croques Banane Brie Recipe) Recipe

I have Lulu to thank for inspiring me to prepare this snack. He was feeling a bit peckish, but there wasn’t a lot of food at home (the refrigerator is broken ). We had some brie leftover from my little munchkin’s birthday party, so he took a wedge of it and put it on a gingersnap cookie. Lulu was very proud of himself and offered me a bite.

The mixture of sweet and salty flavors and soft and crunchy textures was very pleasant, and it instantly took me back in time to my childhood. When I came home from school, I used to make myself brie and banana “sandwiches” with baguette or just sliced bread. It was probably my favorite snack. Given that there were some very ripe bananas in the house along with the brie and gingersnaps, it seemed only fitting that I should share a little bite of my childhood with Lulu and my little munchkin.

Of course, I’m not 7 anymore, so I decided to jazz it up a little. Caramelizing the bananas brought out additional flavors that really complemented the creaminess of the brie. And instead of white bread I used gingersnap cookies as the delivery device for the banana brie combo (thanks Lulu!). I’ve often found myself disappointed when I try to relive the memories of my favorite childhood dishes. This, happily, was not one of those times!

Strawberry Banana Smoothie Recipe Recipe

A strawberry banana smoothie is perfect when you need breakfast on the go. I whip up the drink with frozen strawberries and a banana whenever Lulu is running late. Strawberries aren't quite in season yet, so frozen is your best bet. When you can get them fresh, this drink is even more delicious.

Besides being a vegetarian, Lulu is also lactose-intolerant, so it's a challenge to make him calcium-rich food. I used almond milk and yogurt to deliver calcium without adding too much lactose. I also added a scoop of whey protein to fortify the drink with a little protein. I placed the smoothie in a cup that I sealed with a lid and added a straw.

Lulu left for work with a strawberry banana smoothie in his hand and a kiss on his cheek. I think that's a pretty good way to start the day!

Banana Almond Butterscotch Cookies Recipe

Butterscotch, freeze-dried banana chips and sliced almonds may not be the first ingredients to come to mind when making cookies, but they work incredibly well together. The crunch of the almonds and bananas is a great foil to the soft and creamy butterscotch chips. To reinforce the flavors, I added banana extract to the brown sugar cookie dough. The cookies taste fantastic, right out of the oven.

If you have a little extra time on your hands, make an extra batch so you can freeze the cookie dough for later use. We had some surprise company for tea this weekend, so I needed to whip up a plate of cookies. I just pulled out a log from the freezer, cut it into discs and popped them in the oven. They taste so much better than store-bought cookies, and when you pull them out of the oven, ooey gooey and piping hot, you'll look like an absolute rockstar!

Banana Coconut Creme Brulee

A journalist contacted me this week and asked if she could use my crème brulée photos. Not that I need much prompting, but it got me thinking of crèmes brulées and I thought I could try out some new flavors.

I happened to have baby bananas in the house, along with some leftover shredded coconut from making lima bean curry. The mini bananas come from Guatemala. They are very sweet and flavorful. I caramelized them in sugar and used them as garnish. I flavored the custard with the shredded coconut, rum and banana extract. The result is a very pleasant dessert using ingredients that are available this season. Can't wait for spring to experiment with more flavors!

Bananas Foster Recipe

Bananas Foster

This recipe could more accurately be described as bananas "faux-ster" because there's no ice cream or alcohol. I call it "safe" bananas foster because there's no fire hazard and it's kid-friendly.

Traditional bananas foster is served over vanilla ice cream, but it will work with just about anything. I made a caramel-rum sauce for this dish to pair with my panettone pudding. To repeat the flavors from the bread pudding, I used coconut cream instead of heavy cream. When the caramel was nice and hot, I added sliced ripe bananas to the pan. The bananas softened, absorbed the sweetness of the caramel, and were ready to serve.
