Tofu Dessert in Ginger Syrup (Tau Hu Nuoc Duong) Recipe

Tàu hũ nước đường is a Vietnamese tofu dessert in ginger syrup. The texture of silken tofu is very similar to custard, but without the calories. I used store-bought silken tofu (see tips) and paired it with clementine ginger syrup. The early crop of clementines we harvested from our garden are not extremely sweet. They have a hint of tartness, which is just the way I like them! The zest is so fragrant I had to use it in this syrup.

I have made my own firm tofu before, which is quite easy, but I've always wanted to make silken tofu. After a few searches, I stumbled upon Wendy's beautiful Chinese food blog, where she shares her technique on how to make silken tofu, using Glucono-Delta-Lactone (GDL). I haven't tried her recipe yet, because I first have to find this ingredient. I can't wait to make my own silken tofu; I will definitely keep you posted.

Green Jackfruit with Tofu Recipe

Green Jackfruit with Tofu

Mít & tàu hũ kho tương is a fairly common vegetarian dish in the Buddhist community. Mít ("jackfruit" in Vietnamese) is picked when it's still green. First, the young fruit is boiled to soften it. Then it's braised in soy sauce and used as a vegetable to accompany tofu. Like tofu, unseasoned green jackfruit is fairly bland but acts as a sponge and absorbs the flavors of the sauce.

The cooking procedure helps to give the jackfruit a soft texture that resembles the pork fat in thịt kho (braised meat), and the stringy texture of the jackfruit simulates the stringy texture of the meat. The result is quite pleasant and surprising. Next time you're in an Asian market, look for fresh young jackfruit; it's delicious!

Braised Rolled Tofu Skin Recipe (Yuba) Recipe

Tàu hũ ky kho is braised rolled yuba (very thin sheets of tofu skin / bean curd) in a thick, mildly sweet soy sauce. This dish is supposed to resemble bò cuốn hành hương (rolled beef with aromatic shallots in Vietnamese). The many layers of bean curd give a meaty texture to the tofu.

I served them with steamed white rice and a Vietnamese soup called canh mồng tơi on the side. This dish is perfect for my house as everyone was satisfied and shared the same meal: rolled beef (I'll post the recipe soon) for the meat eaters and mock beef rolls for the vegetarians. Even if you don't have the same variety of diets in your house, you can of course still enjoy the benefits of this healthy and flavorful meal.  If you've never tasted tofu skins before, this is a great introduction.

Vietnamese Fried Bean Curd Soup (Hu Tieu Chay) Recipe

Lulu calls hủ tiếu chay (fried bean curd soup in Vietnamese) the ultimate Asian comfort food. The hearty broth is flavored with bold Asian ingredients, such as ginger, garlic and mushroom seasoning salt. There are a couple of uncommon elements; I used Fuji apples and rock sugar to add a touch of sweetness to the broth, and a Vietnamese variety of cured daikon radish (củ cải khô) that provides the signature flavor of hủ tiếu broth.

The real treat though, is the addition of fried tofu skin. It's used throughout vegetarian Vietnamese cuisine as a substitute for fried pork or chicken skin in mock meat dishes. The texture is crispy, yet chewy, and really shows off the versatility of tofu.

Vietnamese Tofu Stuffed Betel Leaves  Recipe

Tàu hũ cuốn lá lốt (betel leaf wrapped tofu in Vietnamese) is very similar looking to Greek dolmades. Instead of using grape leaves though, betel leaves serve as the packaging and delivery device for pan-fried tofu and vegetables. Betel leaves have a peppery taste, and when cooked they have the appearance, but not the texture of nori. The tofu mixture is similar to the filling I use for my vegetarian egg rolls.

The traditional way to prepare this dish is with extra lean ground beef (see tips), called thịt bò nướng lá lốt. However, Aunt Elise, who is a vegetarian, is visiting from Vietnam and taught me how to make the meatless version of the dish. Either way, it's an exotic and authentic taste of Vietnam.
