Tuiles Aux Amandes (Almond Tuiles) Recipe

Today we made some ginger ice cream in the ice cream machine we got Daddy, my father-in-law, last Father's day. The machine requires no pre-freezing, which is very convenient. I got the recipe for this frozen treat from PastryPal, which is written by Irina. We made half of the volume since it was the first time we were trying this recipe out. Irina's recipe calls for 4 egg yolks, but I wasn't about to throw away the 4 egg whites so I decide to make some almond tuiles.

Tuiles aux amandes are crisp thin cookies topped with slivered almonds. It's a great garnish for ice cream because of the texture contrast between the crispy cookie and the creamy frozen treat.

South Indian Spicy Nut and Puffed Rice Snack (Chudwa) Recipe

Chudwa, sometimes called chevda, is for South Indians what trail-mix is for us. It's a blend of nuts, dried fruit, puffed rice and various typical Indian spices.

It's very easy to make, but like eggrolls, it's time-consuming. It's a big production. One of my sisters-in-law is in charge of assembling the ingredients. My mother-in-law is the one frying the puffed rice flakes. One other sister's job is to sprinkle the spices as soon as the ingredients are out of the oil. My job is to toss the whole thing and, last but not least, the other 2 younger sisters' job is to taste.  It's a tough job, but somebody has to do it.

Apricot Tart with Almond Cream and Kaffir Lime Ginger Glaze Recipe

I was in the mood to bake today. I thought about making apple tartes amandines but everyone said they were bored with this flavor. So to please the whole house, I paired the almond cream with fresh ripe apricots. In France, you would order "une tarte amandine aux abricots, s'il vous plait!" in a patisserie (bakery). You probably won't learn this phrase in any French for tourists books, but I'm telling you, it's essential for your survival .

For the glaze, I had Laura's apricot pie jelly, a few kaffir lime leaves left that I did not used for my sweet and sour pineapple soup and some fresh ginger. It gave a nice kick to the apricot.

I know what you're going to say about my family. How spoiled are they?

Mina's Pistachio Almond Cardamom Kheer (Indian Rice Pudding) Recipe

If you've been to an Indian buffet, you've probably had some kheer. This kheer is a regular rice pudding made with Indian spices. Cardamom, almond and pistachio are common flavorings in Indian desserts. It was flavored at the end with kewra water. You can also add a touch of saffron water to give a yellow color to the dessert as well.

Every culture that uses rice as a starch has some form of rice pudding. In France, it's called le riz au lait. In Vietnam, it's chè đậu trắng, a black eyed pea sticky rice pudding. And of course, there is good old American rice pudding, usually topped with nutmeg, mace and cinnamon.

Mina is Lulu's cousin. We had a potluck going on this weekend and she brought desserts. And as a food blog addict, I had to post it.

Tarte Amandine (Apple Tart with Almond Cream) Recipe

Happy New Year! My resolution for year 2009 is to post a new recipe everyday. I decided to start with a tarte amandine because one of the main components of the dish is frangipane, a buttery almond filling. I'm originally from France and frangipane figures heavily into the traditional cake, called Galette des Rois (litterally Kings' Cake), which is served in the month of January to commemorate the Christian Holiday of Epiphany.
