Blackberry Creme Brulee Recipe

Blackberry Creme Brulee

03.11.10 by Jackie

Crèmes brulées are my mother-in-law's pêcher mignon, which literally translates to "cute fault" in French (which means guilty pleasure). I keep telling her that these custard desserts can be flavored with anything and she keeps challenging me. She brought home a whole case of blackberries from our local market and asked if I could make her favorite dessert cups with them.

So after flavoring crème brulée with lemon, cherry, butterscotch, matcha green tea and masala chai, I was able to prove to her that I still have a few tricks up my sleeve.  It has occurred to me though that maybe her "challenge" is just an excuse to get me to make more crèmes brulées. As long as I can come up with more flavors, I'll keep playing along. After that, she'll have to come up with a better reason!

Masala Chai Creme Brulee Recipe

Masala Chai Creme Brulee

02.05.10 by Jackie

This version of crème brulée is flavored with the spices that are used in masala chai. Cloves, cardamom, ginger and cinnamon give the dessert the distinct flavor of masala chai combined with the richness of a French custard. I wasn't sure how it would turn out, but after the first bite it has become my favorite flavor. Don't get me wrong; lemon, butterscotch and green tea are great flavors, but the masala spices are absolutely intoxicating.

I'm not a big tea drinker, but whenever we have a party and serve masala chai, I end up drinking all the leftovers. What can I say, I'm addicted. Even though the flavors of this drink are fabulous, it's probably good that I don't drink this particular tea that often because of its high caffeine content. Masala chai crème brulée has as much caffeine as a cup of masala chai, along with all the fat that is found in a crème brulée. Something else to keep me awake at night!

Chocolate Macadamia Brownies with Pumpkin Cream Recipe

The base of the dessert is a layer of chocolate macadamia brownie. I filled the rest of the bowl with a pumpkin cream made with mascarpone cheese. It has a light and creamy texture that is the perfect backdrop for the decadence of the brownie. To top off the dessert, I added some whipped cream dusted with cinnamon. A few brownie crumbs make a nice final touch, as well as sign of what's to come as your spoon cuts through the pumpkin cream.

We love brownies and make them more often than we probably should, but until now I've never served them to guests. This was my attempt to dress up a brownie into a dessert that could be served at the end of a nice dinner party. I'm happy to report that the dessert went over very well. Brownies have an incredible ability to turn anyone who even looks at them into a kid again, and it was a wonderful way to end an elegant meal.

Matcha Green Tea Creme Brulee Recipe

Matcha Green Tea Creme Brulee

12.09.09 by Jackie

This dessert combines two of my favorite things, crème brulée and green tea. I love the natural jade color of matcha green tea powder, along with its distinctive flavor. It's an ingredient I use a lot in desserts. Whether it's in cookies, madeleines, pound cakes, crème pâtissière or chocolate truffles, the result is always a success.

My personal favorite application for green tea powder though is crème brulée. One could probably add spinach to crème brulée and it would still taste great, but there's something special about the flavor of green tea that cuts the decadence of the dessert while enhancing its elegance.

Butterscotch Creme Brulee Recipe

Butterscotch Creme Brulee

05.17.09 by Jackie

Crème brulées, though tasty by themselves, are a perfect palette for other flavors. My husband Lulu loves butterscotch, so I came to the fairly obvious conclusion that I should combine the two of them.

If you're not a big fan of butterscotch, you can substitute any other flavor that you like but you have to balance the sweetness of the dessert.
