Braised Rolled Tofu Skin Recipe (Yuba) Recipe

Tàu hũ ky kho is braised rolled yuba (very thin sheets of tofu skin / bean curd) in a thick, mildly sweet soy sauce. This dish is supposed to resemble bò cuốn hành hương (rolled beef with aromatic shallots in Vietnamese). The many layers of bean curd give a meaty texture to the tofu.

I served them with steamed white rice and a Vietnamese soup called canh mồng tơi on the side. This dish is perfect for my house as everyone was satisfied and shared the same meal: rolled beef (I'll post the recipe soon) for the meat eaters and mock beef rolls for the vegetarians. Even if you don't have the same variety of diets in your house, you can of course still enjoy the benefits of this healthy and flavorful meal.  If you've never tasted tofu skins before, this is a great introduction.

Kumquat Breaded Baked Tofu

Kumquat breaded baked tofu is the result of one of my various culinary experiments. I pan-fried pieces of tofu, covered them with a crust of bread and baked till golden. Tofu is a blank canvas that will absorb any flavor. By drizzling the puffed baked tofu with a ginger kumquat sauce, the complexity of the flavor matched the complexity of the texture of the dish.

After making my breaded version of Frenched rack of lamb, I thought it would be fun to make a vegetarian alternative. My little munchkin and I went to the garden and picked a basket full of mini kumquats, and it occurred to me that a kumquat persillade crust would go great with tofu.

Experiments don't always go the way you want them to, but judging by how quickly Lulu and the girls devoured the dish, I'd say it worked out all right. Give it a try, and don't be afraid to add your own twist!

Braised Tofu with Hoisin Sauce

Braising is one of the best cooking methods to increase the flavor of tofu. In this particular dish, I braised the tofu in a hoisin sauce-based mixture for its caramel color and subtle sweetness. To this, I added several vegetables such as wood ear mushrooms, button mushrooms, carrots and Japanese eggplants.

If you've been following my culinary adventures, you know I married a vegetarian. I'm not saying it as though it's a flaw, but I have to admit that when we first got married, I was a little nervous about what I was going to feed my sweetie. I really didn't have any familiarity with vegetarian cuisine. I love Lulu so much that I was determined to learn how to prepare flavorful vegetarian meals. Since then, I've tried boiling tofu, pan-searing it, grilling it, braising it and deep-frying it. I think I've gone through every possibility, but If you have any other methods you like for cooking tofu, please drop me a message.

Vietnamese Fried Bean Curd Soup (Hu Tieu Chay) Recipe

Lulu calls hủ tiếu chay (fried bean curd soup in Vietnamese) the ultimate Asian comfort food. The hearty broth is flavored with bold Asian ingredients, such as ginger, garlic and mushroom seasoning salt. There are a couple of uncommon elements; I used Fuji apples and rock sugar to add a touch of sweetness to the broth, and a Vietnamese variety of cured daikon radish (củ cải khô) that provides the signature flavor of hủ tiếu broth.

The real treat though, is the addition of fried tofu skin. It's used throughout vegetarian Vietnamese cuisine as a substitute for fried pork or chicken skin in mock meat dishes. The texture is crispy, yet chewy, and really shows off the versatility of tofu.

A few months ago, I came across this article from MSNBC entitled "Pass the tofu: 1 in 200 kids is vegetarian". I was amused because there are 4 kids in our household and three of them are vegetarian. So when the article underlines the fact that adolescent vegetarianism seems to be rising, I totally agree. I don't have kids yet but I hope they will be open to a wide variety of foods while eating meat in moderation, unless my vegetarian husband and my father-in-law try to influence them!

Anyway, many studies have concluded that a diet high in red meat increases the risk of various cancers when compared to a vegetarian diet. As a meat eater, I'm always more reluctant to try vegetarian food even though, I keep having to come up with more varied vegetarian meals for the non-carnivores in my house. So here is a recipe that both meat-lovers and vegetarians will love for its texture and flavor. Try it out and remember, there are health benefits for you to consume less meat overall in your diet. How about starting with one veggie meal a week?
