Pattypan Squash Salad Recipe

The vinaigrette for this fresh pattypan squash salad is a blend of chives, parsley, oregano, tarragon, thyme, a bit of mint, garlic, onion and lemon finished with a drizzle of good quality extra-virgin olive oil. You could serve this salad nicely as a side dish; it goes quite well with grilled chicken, for example. Pattypansquash goes by many names. You may recognize it as sunburst squash, cibleme, scallopini squash, custard squash, scallop squash, button squash or summer squash. No matter the name, pattypan squash makes a pleasantly sweet and refreshing addition to just about any salad or grilled vegetable medley. Anchovy Vinaigrette Recipe

I had an opened jar of anchovies in the refrigerator from the photoshoot I did for my upcoming cookbook (Haute Potato, out this December). Since I'm the only one in our home who likes the oily, salted fish, I came up with a simple way of putting it to good use. I found the anchovies to be a bit too salty to my taste, so I ran them under cold water, then ground them into a paste. The flavor-packed mixture became the base of a salad dressing. The rest is really as it pleases you; I added a bit of horseradish mustard for a little heat, fruity extra-virgin olive oil and Champagne pear vinegar for a touch of decadence.   

The salad was composed very simply of hard-cooked eggs, tomatoes, pine nuts and butter lettuce. Voilà!

Radish and Goat Cheese Napoleon Recipe Recipe

This radish and goat cheese napoleon recipe was inspired by an elegant beet appetizer I had several years ago at Spago, Wolfgang Puck's restaurant. Colorful layers of sliced, pickled Cherry Belle radishes, candied walnuts, goat cheese spread and rounds of whole grain noor thin bread give the dish its visual appeal. The pungency from the radishes offsets the velvety smoothness from the goat cheese. Sprinkled with candied walnuts, arugula and a few sprouted radish shoots as garnish, a larger portion of this light salad could be served as a one-dish meal. I finished the salad with a flavor-matching vinaigrette, a scrumptious sesame and candied walnut salad dressing.

The bread used in this dish is a new product from my friends over at California Lavash. It’s made with whole grains and is studded with black and white sesame seeds. It’s a great choice if you want to make a healthy dish, but I obviously didn’t do that today! Avocado Gourmet Salad Recipe

This salad is composed of thinly-sliced avocado, Bolero Nantes carrots and crisp Cherry Belle Radishes. Mixed freshly cut corn, fresh garbanzo beans, Persian cucumbers, roasted green bell peppers, sprouted radish shoots and fried matchstick white sweet potatoes complete the refreshing dish. But what truly defines it is the beautifully colored and flavorful parsley oil. If dressed properly, this salad could be a perfect first course for your dinner party.

When I was asked to write Haute Potato (my first cookbook coming out this December), I tested more than 100 recipes, but only 75 gourmet potato dishes finally made it to print. This salad didn’t make the cut. I think it tastes wonderful, but it’s not as over the top as the recipes in the book. In the right setting though, it would make a lovely addition to your meal.

Quinoa Stuffed Zucchini Recipe

Quinoa stuffed zucchini is not only a delicious and colorful dish, it's also very healthy. I flavored tri-color quinoa with grilled vegetables, grilled haloumi cheese and red beans. I also topped the dish with slices of sun-dried tomato chicken sausage. 

I was able to prepare this dish by using the same grill pan over our barbecue that I used to make yesterday's peach melba. I've included a review of the Technique grill as well, in case you're interested. If after reading the review you can't wait to get your own, I have some great news for you! I have another grill pan to offer exclusively to one lucky reader! Sharing is caring!

Unfortunately (and this is purely due to the popularity of the pan), the grill pan is no longer available for sale because it recently sold out. That really speaks to what a great product it is! There's a similar, less expensive Teflon® Brand pan available at IKEA; it has all the advantages of TeflonR nonstick coating, but it's not dishwasher friendly and it's made for the indoors.
