Roasted Butternut Squash and Raw Kale Salad Recipe Recipe

I made a crisp, raw kale salad with roasted butternut squash, toasted pine nuts and crumbled gorgonzola. It’s a one-dish meal you can make in large batches, pack in tupperware and eat when you're on-the-go. 

I flavored the salad with a yogurt dressing and a touch of gorgonzola for extra flavor. The health-conscious can omit the cheese, of course.

Avocado and Persimmon Salad Recipe Recipe

This colorful salad was inspired by my daughter Aria's godmother Nathalie. Not only is Nathalie a wonderful godmother to my baby girl, but she's also an amazing cook. While we were in Paris, Nathalie invited us several times for dinner and made a feast every single time for us. We were so spoiled! 

One of our favorite dishes that she made for us was an avocado and Hachiya persimmon salad. Persimmons, when ripe, have a vibrant orange color, making them perfect for Halloween. In case you were confused, the Hachiya variety is the soft one, with the pointed end. They are irresistible when extremely ripe, but basically inedible before that point. I always ripen the fruit in a paper bag with apples or bananas (or both).

The creamy avocado slices are the perfect contrast to the brightness of the persimmons. To finish the salad, I added spicy sprouts and slightly toasted pine nuts for texture. I think it's the perfect salad for a Halloween party, and I hope you do too!

Wild Rice and Hearts of Palm Salad Recipe Recipe

After making the hearts of palm crostini, my husband Lulu asked for more. I decided to make a healthier hearts of palm dish this time. I served the veggie in a wild rice salad with refreshing greens such as sugar snap peas, celery and flat-leaf parsley. A little sprinkling of sunflower seeds for crunch and crumbled blue cheese for a richer mouth feel completed the dish.

If cooked improperly, wild rice can be very tough and taste like horse food. Follow the few steps I've outlined, and you'll get soft, delicate rice with a nutty flavor.

Shredded Carrot and Walnut Salad Recipe Recipe

Delicious food doesn't have to be complicated. Today I made carottes rapées, which is a staple in French cuisine and requires almost no complicated preparation. This version isn't completely authentic because of a few enhancements I made. Specifically, once the carrots were "rapées" (shredded), I added freshly shredded Parmesan cheese, a few capers, fresh dill and sesame caramelized walnuts. 

There's a saying in French: "Mange des carottes, ça rend aimable!", which translates to "eat carrots, they will make you become more kind". The saying owes its origin to the donkey, which has a reputation for being very stubborn. Carrots were used as, well, a carrot, to make the donkey move faster. So if you’re kids or your significant other are giving you a hard time, try feeding them carrots. It works for me!

Boiled Brussels Sprouts with Grapefruit Salad Dressing Recipe

Cooking Brussel sprouts can be a chore, especially if you roast them. So today since I was running out of time, I simply boiled and mixed them warm with a grapefruit salad dressing. For garnish I added freshly-cut grapefruit segments and sunflower seeds.

Boiled vegetables can be delicious if seasoned and paired with a flavorful sauce. Just look for a few fresh, complementary ingredients before deciding on a particular flavor route.
