I spent the entire weekend cleaning up our vegetable garden. Even though the weather has been gorgeous in the Bay Area, it really feels like summer is turning into fall.

Today's dish is my attempt to showcase the colors of this season, mixing several kinds of beans. I prepared black eyed peas, French green lentils and butter beans. I soaked them overnight, then sautéed them in shallots and carrots to bring out the natural sweetness of the ingredients. I added blanched green beans at the end and flavored the warm bean salad with a citrus dressing.

This polenta crouton salad was my dear friend Carole's idea. Carole is the editor of PhamFatale.com, and someone recently gave her the title of "Literary Swiffer," which I completely approve of. She always comments on the meals I feature on the website. When I posted polenta fries, Carole suggested another version I hadn't considered. She used to eat at a Mexican restaurant in San Francisco that served polenta croutons in their salad and she told me she could have made a meal on the croutons alone!

To make the dish, cubes of polenta are deep-fried until crisp and tossed with mixed alfalfa sprouts, home-grown Sugar Sweet cherry tomatoes, fresh cubed mango and a bit of cheese. Thanks for the inspiration, Carole!

Lobster Orzo Pasta Salad Recipe

This is one of my favorite salads. I pan-seared halved lobsters and garnished them with fennel, lemon and celery orzo salad. To add a luxurious touch to an already luxurious dish, I drizzled the salad with truffle oil. 

To ensure that my husband Lulu was able to share the same meal with me, I prepared the orzo salad separately from the lobster so both of us could enjoy it to our liking; Lulu loved his flavorful vegetarian meal and I absolutely adored the addition of seafood. Feeding a vegetarian has never been this easy!

Summer Salad with Spiced Lemon Coffee Vinaigrette Recipe

This delicious, summery salad makes good use of fresh, crisp ingredients. I also added red quinoa, avocado, fresh mozzarella cheese, fried tofu and chicken pieces to complete the nutritious salad. To put it over the top, I drizzled the salad with an incredible lemon and coffee-flavored vinaigrette.

I was inspired to make the dressing by our trip to Italy two years ago. While on our vacation, we had the opportunity to try spiced citrus coffee. It was absolutely terrific and fairly commonplace; similar flavor combinations can be seen in many coffee cakes and biscotti cookies. I was able to recreate the flavors found in these Italian dishes using Boyajian coffee vinegar and pure lemon oil. I also added extra lemon zest to brighten the vinaigrette.

The vinaigrette itself would also make an excellent marinade for chicken, steaks or root vegetables.

Roasted Bell Pepper and Cucumber Dill Salad Recipe Recipe

Sometimes the simplest things make the most delicious dish. My husband Lulu planted Persian cucumbers this year and lately he's been harvesting 2-3 cucumbers a day. I love the flavor of Persian cucumbers and have had a lot of fun coming up with simple recipes that showcase them.

Salads are a great way to enjoy cucumbers and this recipe is no exception. Since cucumbers have a high water content, I salted them to draw out moisture for a crisp result. I paired them with roasted red bell peppers and seasoned the salad with a simple lemon and extra-virgin olive oil vinaigrette. I also sprinkled a few toasted pine nuts for texture and added fresh dill because this herb marries superbly with the vegetable.

This salad will be a hit at any picnic, pool party or barbecue. It tastes like summer!
